WEIGHT WATCHERS CHICKEN CHEESE STEAKS
This is a Cheese Steak with a twist - lean chicken instead of beef. This recipe calls for reduced-fat American cheese, but you could use any light cheese you would like. The points value is 6 points per serving.

- In a medium nonstick skillet, heat oil over medium-high heat.
- Saute onion until browned and very soft, about 10 minutes.
- Add chicken and pepper and saute until chicken is golden brown and cooked through, about to 5 to 8 minutes; season to taste with salt and pepper.
- Toast buns; spoon chicken mixture down center of each one.
- Place a slice of cheese in each bun and close bun to help cheese melt slightly.
- Yields 1 cheese steak per serving.

- To make chicken, coat chicken with cooking spray; season with salt, pepper and garlic (optional); grill until cooked through, thinly slice and set aside.
- To make veggies, preheat oven to 425°F. Combine peppers, onion, mushrooms, salt, and pepper in a bowl; spread onto a sheet pan coated with cooking spray and roast until tender, stirring a few times, about 20 minutes.
- To make cheese sauce, boil butternut squash until tender, about 10-12 minutes; drain and place in a blender or mini chopper. Add feta, yogurt, salt, and paprika; process until smooth. Taste and adjust seasonings, if necessary.
- To assemble sandwich, top an open-face bun with 3 1/2 oz warm chicken; top with 1/4 c cheese sauce and a few spoons of vegetables.
