WEIGHTLIFTER'S PROTEIN COOKIES

This are the cookies I make for my weightlifting husband. They are very low in fat and full of protein - but although they are tasty enough you wouldn't really want to eat them for fun, they are more like protein bars in a cookie format.

Steps:

  • Mix all the incredients.
  • Use about tablespoon of mixture per cookie, pat down.
  • Bake for about 10 minutes in 200 C/400 F oven.

150 ml protein powder (your favourite flavour, but chocolate works very well)
100 ml rolled oats
100 ml low-sugar muesli (no sugar added)
3 tablespoons olive oil or 3 tablespoons canola oil
2 tablespoons honey
100 ml milk or 100 ml water
2 teaspoons cocoa powder (optional)

WEIGHTLIFTER'S PROTEIN MUFFINS

My version of the protein cookie recipe already on here : (http://www.food.com/recipe/weightlifters-protein-cookies-142209) I use more protein sources (powdered peanut butter, eggs) and cut out a bit of the fat and sugar by lowering the levels of oil and honey, and i added some raisins to improve the texture. i also addressed the issue with shape in the earlier recipe by making a muffin rather than a cookie, which holds it's shape better and holds a better texture from being baked longer. i usually make batches of 25+, and freeze them, taking a few out at the beginning of each day to serve as meal replacement, or as a quick carb fix before the gym. With BSN's Syntha-6 protein powder, (22g protein per 46g serving) i get around 15g protein per muffin, at around 250 calories per muffin, your counts will vary based on brand of musceli, brand of protein powder, and your peanut butter choice (i use pb2) Enjoy, and if you find a variation to use, please let me know! (I know we're not supposed to release variations, but i feel with the different format, and fairly varied ingredients, it's different enough to justify it)

Steps:

  • Set oven to 375°F.
  • 1: Mix dry and wet ingredients separately.
  • 2: Let sit for 5 minutes, to allow the oats to soak in some of the liquid.
  • 3: Rub a muffin pan with olive oil.
  • 4: spoon 2-3 ounces at a time into muffin tin.
  • 5: bake at 357F for 15 minutes.

  • Place a rack in the center of your oven and preheat the oven 350 degrees F. Line a baking sheet with parchment paper.
  • In a medium bowl, combine the peanut butter, coconut sugar, salt, egg, egg white, and vanilla extract. Mix briskly until ingredients are well blended. Sprinkle the baking soda over the top. With a rubber spatula, work in the protein powder and coconut flour until well combined. The will seem very dry first but will continue to come together as you stir and push. Fold in chocolate chips.
  • At this point, judge your dough, as the amount of moisture may vary based on the brand of protein powder and nut butter you use. It should be slightly sticky but not a total mushy mess. If you need a firmer dough, add a bit more protein powder. For a looser dough, sprinkle the batter with a bit of milk (or almond milk) and with a spatula, fold it in until the dough comes together.
  • With a small cookie scoop or spoon, portion the cookie dough by tablespoonfuls and drop onto your prepared baking sheet (you will have 12 to 14 cookies total). With your fingers, gently flatten the tops of the cookies, as they will not spread but will puff up during baking. Bake for 5 to 6 minutes, until the edges are barely golden brown and dry to the touch but the middles seem fairly doughy. Do not overbake! Place the cookie sheet on a wire rack and allow the cookies to cool on the baking sheet for 3 minutes before transferring them directly to the wire rack to finish cooling.
