GRANOLA BARS WITH CHOCOLATE
Most granola bars are too sweet for my taste, so I wasn't much of a fan until I made these. They're inspired by a recipe from "Good to the Grain," by Kim Boyce, but I've cut down on the honey and added chocolate.

Steps:
- Preheat the oven to 300 degrees. Generously butter or oil a 9-by-9-inch metal or glass baking pan.
- Melt the butter over medium heat in a wide saucepan. Add the flaked grains or oats. Stir over medium heat until the grains are lightly toasted, taking care not to let them burn. Stir until they are beginning to smell toasty and have slightly darkened, six to seven minutes. Remove from the heat, and transfer to a bowl. Add the flaxseed meal, the cinnamon and the salt. Wipe the pan clean.
- Combine the honey, vanilla and brown sugar in the pan in which you toasted the oats. Bring to a boil over medium heat. Boil five minutes. Pour over the oat mixture, and stir until it is evenly distributed over the mixture. Allow to cool for five minutes, then stir in the chocolate pieces.
- Scrape into the pan, and spread evenly. Place in the oven for 20 minutes. Do not allow to brown or the bars will be hard instead of chewy. Remove from the heat, and allow to cool. Cut into 16 to 20 pieces, and store in an airtight container.

- In a microwave-safe bowl, combine the marshmallows, candy coating and butter. Microwave, uncovered, on high for 2 minutes or until melted, stirring every minute. Add cereal; stir to coat.
- Transfer to a greased 13-in. x 9-in. pan; gently press mixture evenly into pan. Cut into squares. Yield: about 3 dozen.

Let stand until chocolate is set. Break into small pieces.

- Melt the butter in a large saucepan over low heat. Add the marshmallows until they are just about fully melted into the butter. Some chunks of marshmallow may remain. Add in the Lucky Charms cereal and stir until the cereal is fully coated.
- Pour mixture into prepared baking pan and gently spread out evenly. I sprayed the back of a large spatula with non-stick spray and gently pressed the mixture without packing it down. Allow to set for 2 hours at room temperature before cutting into rectangles or squares, whichever shape/size you prefer.
- Line a large baking sheet with parchment paper or a silicone baking mat. Set aside. Melt the white chocolate according to package instructions. Hold the treat and dip the bottom into white chocolate, making sure to coat it generously. Place treats white chocolate side up on prepared baking sheet. Allow chocolate to set at room temperature for about 10 minutes. Store treats at room temperature for up to 1 week.

- Line an 8x8 inch pan with parchment paper (up the sides). In a large pot, add honey and maple syrup. Bring to a low simmer over medium heat for 1-2 minutes. Lower heat and add sunbutter until combined and creamy. Add a pinch of salt if your sunbutter isn't salted. Off the heat, add your cereal and stir to fully coat.
- Spoon the cereal mixture into your 8x8 inch pan and press down slightly to set everything together. Place your white chocolate in a bowl and microwave in 30 second intervals, stirring after each interval until fully melted. Spread the white chocolate evenly on top. If you'd like, sprinkle 1 tsp of cinnamon on top of the white chocolate.
- Refrigerate up to 2 hours or overnight for best results. To cut, lift the bars from the square pan by holding the parchment paper. With a large knife, slice large sections, then go back to slice smaller squares. Store and serve chilled.
