CANNED VENISON AND WILD RICE CASSEROLE

This tastes great with the canned venison. You could also use ground but would have to brown it first.

Canned Venison and Wild Rice Casserole image

Steps:

  • 1. Preheat oven 350 degrees
  • 2. Layer the rice in a buttered 3 quart casserole dish. Add oil to saute pan. Add onion and celery and cook until tender. Add mushroom and cook until browned. Add the venison.
  • 3. Mix the soup, beef broth and garlic salt together. Pour over venison mixture.
  • 4. Spoon the venison mixture over the rice. Bake covered for 30 min. Garnish with fresh sage and serve,

4 c cooked wild rice
1 lb canned venison with juice
2 stalk(s) celery chopped
1 large onion chopped
8 oz mushrooms sliced
3 Tbsp oil
1 can(s) cream of mushroom soup
1/2 c beef stock
1 tsp garlic salt
1/2 c fresh sage chopped

Succulent braised venison image

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Fry the vegetables in a little oil and butter in a heavy-based casserole for 4-5 mins until golden. Tip in the garlic and fry for a further min, then set aside.
  • Put the venison into a plastic bag with seasoned flour and shake to coat. Add a little more oil and butter to the pan, then fry the venison over a high heat, stirring now and then, until well browned. Don't crowd the pan - cook in batches if necessary. Set aside with the vegetables.
  • Add the redcurrant jelly and wine to the pan, and bring to the boil, scraping up all the bits that have stuck to the bottom. Pour in the stock, then add the thyme, bay leaf, meat and vegetables. Season if you like and bring to the boil. Cover and transfer to the oven for about 1½ hrs or until tender. Remove from the oven and check the seasoning.

5 tbsp plain flour, seasoned with salt and pepper
2 tbsp redcurrant jelly (or rowan or hawthorn jelly)
450ml dry red wine (Rioja is good)
450ml beef stock
2 thyme sprigs
1 bay leaf

Hunter's Venison Casserole image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread mashed potatoes evenly in a 2-quart casserole dish; set aside. Brown the venison in a large skillet over medium-high heat until crumbly and no longer pink, set aside.
  • Heat the canola oil in the skillet, then stir in the red onion, garlic, celery, and red bell pepper. Cook until the onion has softened, about 3 minutes. Stir in cooked venison, and season with Worcestershire, salt, and pepper. Spoon mixture onto potatoes in the casserole dish.
  • Stir together eggs and cottage cheese in a small bowl; spread evenly over meat mixture. Top with tomato slices, and sprinkle with cheese.
  • Bake, uncovered, in preheated oven until set, about 20 minutes.

  • Dredge venison cubes in flour.
  • Brown in butter over medium to low heat.
  • Add onion and garlic and continue cooking about 5 minutes, stirring frequently.
  • Add remaining ingredients except rice.
  • Bring to boil.
  • Add RAW WELL WASHED wild rice and pour in a 2 quart casserole.
  • Cover and bake at 350 degrees about 1 hour, stirring twice while baking.

  • Pour into 2 1/2 or 3 quart casserole dish, cover.

  • Soak the porcini mushrooms in boiling water for 20 minutes, then drain and ensuring you keep the mushroom liquid, roughly chop the mushrooms.Heat a pan on medium head and add the smoked bacon lardons cook until golden and then put to one side.

  • Cook the bacon in a skillet or in the oven on a sheet pan until it’s very crispy. Reserve the grease for later uses, like frying fish. Set aside the bacon for finishing the hotdish.
  • In a cast iron skillet or saucepot over medium-high heat, add the oil or butter and coat the pan. Add the venison and cook until thoroughly browned; season with salt, pepper, and paprika. Remove the meat and set aside. If using meat with high fat content, make sure to drain the fat before adding the spices.
  • In the same skillet or pot that you browned the meat, add the stick of butter with the garlic, onion, and cook until the onions begin to caramelize on the edges. Add the mushrooms, salt, pepper, thyme, and sauté the ‘shrooms until they’re thoroughly cooked. Stir in the flour evenly and cook until the mixture begins to bubble and turn a golden brown (this is the roux or thickening agent that will help make the gravy thick and rich). When the butter/flour mixture turns golden brown, stir in the stock and bring it to a boil. Lastly, stir in the heavy cream and bring to a boil. Reduce the gravy to a simmer, occasionally stirring, allowing it to get very thick (you’re looking for condensed soup-thick). Check for taste and remove from the heat to cool. Alternately, you can skip this step and use the canned cream of mushroom or celery soup_._
  • Preheat the oven to 400 degrees. In a large mixing bowl, combine the ground venison, gravy, 6 ounces of cheese, Top the Tater Dip, sweet corn, green beans, and jalapeño. Dump the hotdish filling into a greased casserole dish and spread evenly. Add a single layer of the tater tots on top of the filling.
