MAC 'N CHEESE AND SPINACH STRATA #SP5
Official Contest Entry: Simply Potatoes 5Fix. A combination of 2 of my favorite foods, this creamy, cheesy casserole is made with Simply Macaroni & Cheese and layered with chopped spinach. Buttery and cheesy breadcrumbs top this delicious dish and give it an added punch of flavor.

Steps:
- Heat oven to 350 degrees F. Coat a 2-3 quart glass baking dish with cooking spray. Set aside.
- Transfer 1 package of the heated Simply Macaroni and Cheese to the bottom of prepared baking dish and spread evenly. Top evenly with spoonfuls of spinach. Cover spinach with 2nd package of macaroni and cheese and spread evenly.
- In a small bowl, combine the breadcrumbs, butter and cheese. Sprinkle over casserole.
- Bake for 30-35 minutes or until hot and bubbly and crumbs are just starting to brown.

Steps:
- 1. Prepare Simply Macaroni and Cheese in microwave according to package directions.
- 2. Empty into a large bowl.
- 3. Add the meat from six Alaskan King Crab legs, one teaspoon white truffle oil, one teaspoon lemon juice and one pinch of saffron (infuse saffron in lemon juice for five minutes).
- 4. Stir all ingredients together gently.
- 5. Microwave for one minute and serve in bowls.

Steps:
- Thaw overnight the package of Simply Macaroni & Cheese in the refrigerator.
- When ready to cook, preheat oven for 400 degrees F.
- In a frying pan or large skillet, heat 2 tbsp of the bacon fat on medium-high. When fat has melted and is sizzling, add the mushrooms and saute them for 4-5 minutes.
- Open the package of Simply Macaroni & Cheese and add to the frying pan. Mix well and allow to cook for 2 minutes. Sprinkle the white truffle oil around the pan and stir well to combine all of the flavors.
- Pour the mixture into a deep glass or ceramic bread loaf pan. Melt the remaining 2 tbsp of bacon fat in the microwave and stir in the panko breadcrumbs. Stir well to incorporate the bacon fat. Top the mac and cheese with the panko breadcrumbs evenly.
- Bake in the upper portion of the oven for 16-20 minutes, or until the topping is golden and the cheese sauce is bubbly. Serve hot!

Steps:
- Preheat oven to 375 degrees F. Grease or spray a 24-cup size mini-muffin pan.
- Cook pancetta slowly in a large pan over medium heat. Turn slices frequently until crispy, about 10 minutes. Drain on paper towels and crumble.
- Add crumbled pancetta to the macaroni and cheese and stir well.
- Spoon macaroni and cheese mixture into mini-muffin cups.
- In a small bowl, mix bread crumbs and chives. Sprinkle on top of each cup.
- Cut each grape tomato into 3 slices crosswise. Garnish each cup with one tomato slice, pressing it down gently.
- Bake in oven until bread crumb topping is light golden brown, about 18-20 minutes.
- Let cool for 15 minutes. Using a butter knife, run the edge around the cups to lift out.

FRIED MAC & CHEESE #SP5
Official Contest Entry: Simply Potatoes 5Fix. It is simply great snack food that is easy to prepare. Fried mac & cheese is served in some restaurants and is a favorite with our family.

Steps:
- Cook Simply Macaroni & Cheese as directed on package.
- After cooked, place the macaroni & cheese in a large bowl (more deep than wide) and mix the green onions. Set aside to cool for about an hour. This will allow the macaroni and cheese to firm up and stick together. May have to let sit longer if not sticking together. (also great when using left over Mac & cheese!).
- Whisk egg until well blended. This will be used to dip your mac & cheese "balls" into so the flour mixture will stick to it for a batter.
- Take the flour and add the steak seasoning to it. Mix well.
- Use an ice cream scoop or round table spoon to form rounded chunks of mac & cheese.
- Gently dip the mac & cheese balls into the egg batter and then roll in the flour. Place into frying oil and fry until slightly golden brown. (approximately 1 minute on medium heat - - be sure to turn on all sides).
- Repeat the process until you have all fried up!
- Makes about 12.

Steps:
- Cut bacon into small pieces. Fry until golden brown.
- Drain bacon.
- Open mac & cheese and pour into deep sauce pan.
- Add 8oz cream cheese. Stir until melted.
- Add 8oz shredded smoked gouda. Stir until melted.
- Add 1 cup of the bacon to mixture.
- Pour into baking dish.
- Put crushed crackers on top.
- Add remaining bacon pieces on top.
- Bake at 350 degrees for 20 to 25 minutes.
- Watch it, as ovens vary in temperature.
- Enjoy.
