SPICY BURGERS

These burgers are chock full of spicy peppers. When handling the chile peppers be sure to wear gloves, and don't let the pepper oils come in contact with your eyes. Serve on buns with your favorite toppings.

Steps:

  • Preheat grill for high heat.
  • In a large bowl, mix together the beef, garlic, jalapeno peppers, poblano pepper, habanero pepper, red pepper flakes, cilantro, and cumin. Form into burger patties.
  • Lightly oil the grill grate. Place burgers on grill, and cook for 5 minutes per side, or until well done.

Steps:

  • 1. Spray grate of outdoor grill with grilling spray. Preheat grill to medium heat according to manufacturer's directions. Meanwhile, set aside 1/3 cup drained tomatoes. Mix together beef, remaining drained tomatoes, salt and pepper in medium bowl. Shape into 4 patties, about 1/2-inch thick.
  • 2. Grill patties 10 minutes or until cooked through (160 degrees F), turning once. Top each patty with 1 slice cheese; melt slightly.
  • 3. Place patties on bottom halves of buns. Top each patty with 3 or 4 avocado slices and a generous tablespoon of reserved tomatoes. Close with tops of buns. Serve immediately.

  • In a small bowl, combine yogurt, spicy dijon, dill, chives, and honey. Set aside.
  • Cut salmon into ½ inch (1¼ cm) cubes and transfer to a food processor.
