GARLIC OIL SAUTEED PASTA WITH BROCCOLI

Steps:
- In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
- Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
- Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
- Cook's Note: Use pasta water if the pasta was made fresh.
- Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

- Lightly steam broccoli until just tender, about 3-5 minutes.
- Remove from heat and set aside.
- Heat 1 tablespoon oil in a large skillet over medium heat.
- Add in pine nuts and cook until lightly toasted, about 1 minute.
- Remove from heat and transfer to a small bowl.
- Using the same skillet, heat the remaining oil over medium heat; add in garlic and cook until fragrant and slightly softened, about 30 seconds.
- Stir in sage, orange zest, and salt/pepper to taste; add in orange juice and keep warm over low heat.
- Cook the ziti in a large pot of salted boiling water, stirring occasionally, until al dente, about 8-10 minutes.

- Bring a large pot of lightly salted water to the boil. Add the broccoli rabe and blanch for 1 minute. Drain and pat dry. Bring another large pot of salted water to the boil. Add the penne and cook until al dente, about 10 minutes.
- Meanwhile, heat 2 teaspoons of the olive oil in a large nonstick skillet over medium heat. Add the pine nuts and cook, tossing frequently, until lightly toasted, about 2 minutes. Add the garlic and cook, stirring constantly, for 30 seconds. Add the broccoli rabe, the water and the red pepper flakes and cook until tender, about 5 minutes.
- Drain the pasta and add the broccoli rabe mixture, the remaining 2 teaspoons olive oil, the lemon juice, salt and pepper to taste. Toss to combine. Divide among 4 plates and serve immediately.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
- Bring a large pot of water to a boil. Add 1 tablespoon kosher salt to the boiling water and stir in pasta. Cook until just about tender to the bite, about 8 minutes (or 1 to 2 minutes less than package instructions).
- At the same time, heat a large, deep skillet or saucepan over medium-high heat. Add sausage and beef and cook, crumbling with the back of a spoon, until browned, about 5 minutes. Add onion, garlic, 3/4 teaspoon salt, 1/2 teaspoon pepper, and pepper flakes; cook until onion is translucent and softened, 3 to 5 minutes.
- Drain pasta and return to the pot. Add about 1/2 cup marinara; toss to coat and let sit until needed.
- Add remaining marinara sauce to the browned meat mixture. Pour 1/4 cup water into each jar, shake to release any leftover sauce in the jar, and pour into the skillet. Stir and bring to a simmer. Reduce heat to medium-low and cook, stirring occasionally, for 10 minutes.
- Stir ricotta cheese, 1/2 cup Parmesan cheese, egg, parsley, basil, and remaining 1/4 teaspoon each salt and pepper together in a bowl.
- Add 2 cups meat sauce to the pasta; toss to coat.
- Spread 1/2 cup meat sauce into the bottom of the prepared baking dish. Add ½ of the pasta mixture and top with 2 cups meat sauce. Lightly dollop and spread ricotta mixture over the top and sprinkle evenly with 1 1/2 cups mozzarella cheese. Add remaining pasta mixture, remaining meat sauce, and remaining mozzarella on top. Sprinkle evenly with remaining 1/4 cup Parmesan.
- Bake in the preheated oven until golden and bubbly, 25 to 30 minutes. Let stand 10 minutes before serving.

Steps:
- In a small dry skillet, toast the pine nuts, stirring constantly to brown evenly. Don't burn!
- Chop the garlic fine. Set aside.
- Separate the broccoli into florets. Peel the skinnier stems and cut into cubes (or reserve the stems for cream of broccoli soup).
- In a large pot of rapidly boiling salted water, blanch the broccoli for about 8 minutes, until it is crisp-tender and still bright green.
- Drain thoroughly in a colander.
- In a sauté pan, heat the olive oil. Add the garlic and let it soften for a few minutes. Be careful not to let it burn.
- Then add the broccoli and pine nuts to the pan. Toss carefully to coat everything well with the garlicky oil. Salt and pepper to taste. Turn into a warmed serving bowl and serve at once. Enjoy!

- Cut sausage diagonally into 1/2" thick slices (just crumble and brown if using a roll of ground sausage). Cook in a large non stick skillet over med-high heat until browned; remove sausage and set aside.
- Meanwhile, cook pasta according to package directions, adding broccoli during the last 5 minutes of cooking time. Drain.
- Cook garlic and red pepper in oil in skillet, stirring constantly, until lightly browned; add tomatoes and cook until thoroughly heated. Remove from heat and keep warm.

- Blanch the broccoli in plenty of boiling water for 3 minutes or so. Drain in a colander and refresh under ice-cold water to preserve its color. Drain again and roughly chop.
- Cook the pasta in plenty of boiling salted water for 10 to 12 minutes, or according to the package instructions, until al dente.
- Meanwhile, put the butter and garlic into a cold large frying pan, place over medium heat and cook for a minute or so, until the garlic is fragrant but not browned. Add the broccoli, cover with a lid or baking sheet and cook very gently for a few minutes. The broccoli should be very soft and yield easily to a wooden spoon pressed on it. Stir in the mascarpone, if using, and blue cheese and heat through to form a sauce. Season with salt and lots of pepper to taste. Stir in the pine nuts.
- Drain the pasta, but don’t be too precious about draining off every drop of water. Transfer the pasta straight into the broccoli pan and mix well. Serve in warmed bowls, with vegetarian Parmesan cheese grated over, if you like.
