ZUCCHINI AND GROUND BEEF SKILLET

This is my wife's favorite meal. A flavorful blend of ground beef, vegetables, and your favorite cheese. A true one-skillet meal that will satisfy your whole family!

Zucchini and Ground Beef Skillet image

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Stir mushrooms, tomato sauce, olives, and garlic into the skillet. Crush stewed tomatoes into smaller pieces and add to the mixture. Season with salt and white pepper. Let simmer, uncovered, until liquid reduces, 20 to 30 minutes.
  • Slice zucchini lengthwise; cut into 1/2-inch slices and add to the skillet. Cook, covered, until firm yet tender to the bite, 5 to 7 minutes. Stir in Cheddar cheese and cook, covered, until melted, 3 to 4 minutes. Serve.

This is the perfect use for all those jumbo zucchinis growing in your garden! Sprinkle each slice with additional dried oregano and dried basil as desired.

Italian-Style Zucchini Boats image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  • Drizzle olive oil on zucchini and season with salt and pepper. Place on the prepared baking sheet.
  • Bake in the preheated oven until zucchini is fork-tender, 30 to 45 minutes.
  • While zucchini is cooking, heat a large skillet over medium-high heat. Cook and stir ground beef with onion and garlic until browned and crumbly, 5 to 7 minutes. Stir in dried basil, dried oregano, and garlic salt.
  • Combine tomato paste with 1 cup of water in a small bowl. Mix thoroughly. Drain fat from beef mixture if needed. Add tomato paste mixture and heat through. Turn off heat, add fresh basil leaves, and mix until well blended.
  • Remove zucchini from the oven; leave the oven on. Scoop meat mixture generously into each zucchini quarter and sprinkle each with mozzarella cheese. Return to the oven and bake until cheese is melted, about 5 minutes.

Zucchini Beef Italiano image

Steps:

  • Sason the flour with salt & pepper & tip into a plastic bag, toss the beef around in the bag until all pieces are coated.
  • Melt the butter in a pan and brown the beef over high heat.
  • Transfer beef to an oven-proof casserole dish (approx 20cm x30cm).
  • Add remaining ingredients to the frypan and stir briskly until it reaches a boil.
  • Pour the sauce over the beef, cover dish & bake at 180.C for 1 1/4 hours.
  • Meanwhile mix the cheeses together.
  • Take the casserole out of the oven and layer the zucchini over the top in a decorative pattern, sprinkle cheese over the top and bake for a further 30-45 minutes.

Zucchini Italiano image

Steps:

  • 1. Preheat oven to 375
  • 2. Trim ends of zukes and cut in half lengthwise. Carefully scoop out centers leaving 1/4" thick shells.
  • 3. Chop pulp (about 1 cup) and reserve. Brown the beef and drain fat. Stir in reserved pulp, bread crumbs, parmesan cheese, oregano, salt and pepper, egg, and 1/2 c of marinara.
  • 4. Place zucchini shells in a shallow baking pan. Spoon meat mixture into the shells. Pour remaining marinara over and around the zukes. Cover and bake until shells are tender; 30-35 mins.
  • 5. Pull from oven and sprinkle with mozarella cheese. Bake uncovered until cheese melts.

4 medium zucchini (2 lbs)
1 lb ground beef

  • Heat oven to 400°F.
  • Brown meat with onions in large skillet on medium heat; drain. Stir in 1/2 cup tomato sauce, zucchini, rice, oregano and basil.

  • Preheat oven to 350 degrees Fahrenheit. Pour 1/2 cup pasta sauce in a large glass baking dish and set aside.
  • Make the zucchini boats. Cut bottom and top off the zucchini and then cut in half lengthwise. Using a spoon, hollow out the center of the zucchini halves, leaving about 1/4-1/2 inch shell. Place flesh side up in glass baking dish.
  • Place a large sauté pan over medium heat. Once it gets hot, about 30 seconds, add in ground beef, breaking it up with a spoon. Sauté 4-5 minutes until browned. Add in diced tomatoes, Italian seasoning, and 1 cup pasta sauce. Stir to combine and remove from heat once incorporated.
  • Stuff the zucchini boats with the beef dividing it up equally, about 1/2 cup per each boat. Cover pan with foil and bake for 30 minutes until zucchini is cooked through, but still has some firmness. Top with optional toppings and enjoy!
