2-MINUTE NOODLES FOR TWO WITH HAM & CHEESE
A quick tasty way I serve 2-minute noodles. This makes a generous serve for two, it would be enough for a family of four as a light meal / snack.

Steps:
- Hard boil eggs and let sit in cold water for 5 minutes before peeling and cutting into 6-8 slices.
- Cook noodles for 2 minutes in boiling water then drain liquid and add in flavour satchets from 2 of the packets (ie one will be left-over).
- Gently mix cheese, ham and sliced egg into the noodles and serve immediately.

NOODLE OMELETTE
I created this for my kids. It's very quick to make and they love it. You can use any flavoured 2 minute noodles although I have only ever used chicken. The cheese can be optional, I have made this without cheese. My husband loves to add mushrooms, tomatoes & onions to this for himself but the kids don't like that. I make this often on those nights when I don't have much time & I usually serve it with sausages & hash browns or salad.

Steps:
- Lightly beat eggs. Add salt & pepper to taste.
- Drain cooked noodles & add to eggs. Mix with a fork.
- Add cheese & mix with fork.
- Heat frying pan & add a little butter. (you can use spray oil if you like).
- Pour in egg & noodle mixture ensuring the noodles are spread evenly within the mixture.
- Cook until both sides are slightly browned (I flip it with a spatula).

- Cook linguine according to package directions. , Meanwhile, in a skillet over low heat, melt butter. Stir in flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil; boil and stir for 2 minutes or until thickened. Remove from the heat. Combine cheeses; toss with lemon juice. Add to the sauce; stir until cheese begins to melt. Drain linguine; add the cheese sauce and toss to coat.

Most kids love 2-minute noodles and corn fritters so in this recipe, adapted from a recipe on the Simply Great Recipes website, the two have been combined to make yummy kid-friendly pancakes. If you want to sneak in some different vegetables, you could probably get away with this the second or third time you make these! For an adult version, perhaps add bacon, garlic, and serve with sour cream and lemon wedges.
