Mexican Chopped Salad with Toasted Cumin Vinaigrette image

Steps:

  • Heat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat.
  • Place corn on hot pan and cook 3 to 5 minutes, until golden brown on all sides, turning frequently. Remove from heat and cool. When cool enough to handle, slice kernels from cob. Transfer kernels to a large bowl and add chicken, beans, cheese, olives, tomatoes, apple, jalapenos, and cilantro. Toss to combine.
  • For the dressing: Heat oil in a large skillet over medium heat. Add cumin and cook 1 minute, or until fragrant. Remove from heat and whisk in vinegar. Add dressing to chicken mixture and toss to coat. Season to taste with salt and freshly ground black pepper.

Three-Bean Salad with Vinaigrette image

Steps:

  • Fill a large bowl with ice water; set aside. Set a steamer basket in a large pot with a lid. Fill with enough water to come just below basket; bring to a boil.
  • Place green and wax beans in basket; reduce heat to a simmer. Cover pot, and steam until beans are crisp-tender, 6 to 8 minutes. With tongs or a slotted spoon, transfer beans to ice water. Drain, and pat dry.
  • In a medium bowl, whisk together mustard, vinegar, and oil; season with salt and pepper. Add green, wax, and cannellini beans; toss to coat. If storing, cover and refrigerate up to 1 day; bring to room temperature before serving.

3-Bean Salad with Lemon Vinaigrette image

Steps:

  • For the lemon vinaigrette: Using a rasp grater, grate the garlic into a bowl. Add the lemon juice, cumin, honey and Dijon. Whisk in the olive oil and season with salt and pepper.
  • For the 3-bean salad: Mix the celery, green onions, black beans, kidney beans and white beans in a large bowl.
  • Dress the salad with 1/4 cup of the vinaigrette and toss well. Season with salt and pepper and toss with the parsley.

2 cloves garlic
1/3 cup lemon juice
1 teaspoon ground cumin
1 teaspoon honey
1 teaspoon Dijon mustard
2/3 cup extra-virgin olive oil
Salt and pepper
3 stalks celery, finely chopped
1 bunch green onions, green parts only, finely chopped

Quinoa, Pea and Black Bean Salad With Cumin Vinaigrette image

Steps:

  • Place the quinoa in a strainer and rinse several times with cold water. Place in a medium saucepan with 1 1/2 cups water and salt to taste. Bring to a boil, cover and simmer 15 minutes, until the grains display a threadlike spiral and the water is absorbed. Remove from the heat, remove the lid and place a dish towel over the pan, then return the lid to the pan and let sit for 10 minutes or longer undisturbed. Transfer to a salad bowl and fluff with forks.
  • Toss the black beans, peas, red pepper, chili pepper and cilantro with the quinoa.
  • Mix together the lime juice, vinegar, salt to taste, garlic and cumin. Whisk in the olive oil and the buttermilk. Toss with the salad and serve.

Three-Bean Salad with Honey-Mustard Vinaigrette image

Steps:

  • Make the vinaigrette: In a small bowl, whisk together lime juice, tarragon, chives, honey, mustard, and salt until combined. Set aside.
  • Prepare an ice bath; set aside. Bring a medium saucepan of water to a boil. Add haricots verts or green beans; simmer until bright green but still crisp, about 2 minutes. Using a slotted spoon, transfer haricots verts to ice bath, and let cool completely. Drain in a colander, and pat dry with paper towels. Place in a large serving bowl. Add kidney beans and cannellini, and drizzle with vinaigrette. Toss to coat. Gently toss in the mache or watercress; season with pepper. Serve.

  • Set up an ice bath by filling a medium bowl half full of ice and cold water. Bring a large pot of water to a boil, add 1 teaspoon salt and green beans. Boil for 5 minutes. Drain beans and immediately place them in the ice bath to stop the cooking process and keep them bright green. Chill until cold, about 5 minutes, then drain and dry. Dump the ice water, dry the bowl. Chop the green beans and add to the bowl. Add the kidney and garbanzo beans. Stir gently.
  • Add oil, vinegar, mustard, garlic salt and pepper to a jar with a tight fitting lid. Shake well until smooth and blended. To dress the salad, add 3 tablespoons of vinaigrette and toss gently. Add more if desired. Serve room temperature or chilled.

  • Combine the black-eyed peas and water in a soup pot, casserole or Dutch oven and bring to a boil. Reduce the heat slightly and spoon off any foam. When all the foam has been spooned off, add the onion, garlic and the bay leaf. Reduce the heat, cover and simmer 30 minutes. Add salt to taste, about 2 teaspoons, and continue to simmer until the beans are thoroughly tender but still intact, another 10 to 15 minutes.
  • Taste and adjust the seasonings. Drain the beans over a bowl (reserve 1/2 cup of the liquid for the vinaigrette) and return them to the pot or transfer to a large bowl. It's fine if some of the broth remains.
  • Mix together the vinegar, garlic, mustard, cumin, salt and pepper to taste, bean liquid and olive oil. Stir the vinaigrette into the beans.
  • Taste and adjust the seasonings. Serve the salad from a large bowl or earthenware pot, or if using the greens, line a big salad bowl or platter, or individual plates with the salad greens. Give the beans a stir, pile them onto the greens, and serve.
