CRUNCHY WEST AFRICAN CABBAGE SALAD
Cabbage salad has never been so good! This combines, sweet salty and crunchy all into one. Best if eaten within 24 hours.

Steps:
- In a medium bowl combine cabbage, apples, cucumber and raisins.
- Toss to mix.
- In a small bowl, whisk mayonnaise, lemon juice, vinegar, salt and sugar for 1 minute.
- Pour over cabbage mixture and toss to coat well.
- Sprinkle with chopped peanuts and chill well.

Steps:
- 1. To make the salad - In a large bowl mix together crushed Ramen noodles, coleslaw mix or shreeded cabbage, green onions, almonds, and sunflower seeds.
- 2. To make the dressing - In a seperate bowl; Mix together oil, sugar, vinegar, and Ramen seasoning packs. Stir well.
- 3. Pour dressing over cabbage mixture and toss salad to disperse dressing.
- 4. It's ready to serve.

Steps:
- Place sesame seeds and almonds on a microwave-safe plate and microwave on high until lightly toasted and you can smell them toasting (about 2 to 3 minutes). Stir frequently while cooking. Set aside.
- In a large bowl, combine cabbage, peppers, snow peas, and green onions. Crush ramen noodles and set aside.
- In a medium bowl, combine oil, water, vinegar, sugar, and 1 seasoning packet. Discard remaining seasoning packet. Beat dressing with wire whisk until combined.
- Just before serving, toss crushed noodles, toasted almonds, and sesame seeds with cabbage mixture. Pour dressing over salad and toss well.
