BAKED PEACH
I've had baked apples, but baking peaches is a new concept for me. I can't wait to try this. It's from a locah 4-H cookbook.

Steps:
- Wash and peel peaches. Cut in halves. Place peach halves in a 2 quart casserole dish.
- Mix honey and lemon juice together and pour over peaches.
- Cover and bake at 350 for 30 minutes or until tender.
- Serve warm or cold with ice cream. Use the soy to make this dairy-free.
BAKED PEACH OATMEAL
This is my favorite breakfast during peach season! It's sweet and comforting, and so easy because it can be made the night before and just popped in the oven in the morning. This recipe is from the Churchtown Inn in Churchtown, PA, although I modified it slightly. If you use soy milk and a dairy-free margarine, it's dairy-free!

Steps:
- Whisk together soy milk, vanilla, and eggs until well combined.
- Add quick oats, brown sugar, baking powder, cinnamon, and salt; mix well.
- Stir in margarine and peaches.
- Pour into 8x8-inch baking dish; set at least 3 hours or overnight in refrigerator.
- Place cold dish in cold oven; set oven to 350 degrees and bake for 25 to 30 minutes, or until oatmeal is puffed and golden brown and a toothpick comes out clean.
- Let cool 10 minutes before serving.
- Serve in individual bowls with enough vanilla soy milk to moisten but not to make it mushy!

BAKED PEACH PANCAKE

- In a small bowl, combine peaches, sugar and lemon juice; set aside. In a large bowl, beat eggs until fluffy. Add the flour, milk and salt; beat until smooth. , Place butter in a 10-in. ovenproof skillet in a 400° oven for 3-5 minutes or until melted. Immediately pour batter into hot skillet. Bake for 20-25 minutes or until pancake has risen and puffed all over. , Fill with peach slices and sprinkle with nutmeg. Serve immediately, with sour cream if desired.

- Preheat oven to 400 degrees F (200 degrees C).
- Arrange brown sugar, 1 teaspoon per peach, in a 9x13-inch baking dish. Top each brown sugar mound with a piece of butter and a sprinkle of cinnamon. Place a peach half, cut-side down, on top of brown sugar-butter.
- Bake in the preheated oven until peaches are soft, 15 to 20 minutes.
- Plate 2 warm peaches per serving and top with 1 scoop vanilla ice cream.
