Amazing Pumpkin White Chocolate Chip Cookies Recipes
WHITE CHOCOLATE PUMPKIN COOKIES
This recipe was given to me by my aunt. Easy to make and everyone loves it. The hardest part is not eating them all while you are baking them!

Steps:
- In a small bowl, whisk together the flour, pumpkin pie spice and baking soda.
- In a medium bowl, with an electric mixer, cream butter and sugar. Beat in pumpkin pie puree. Beat in the eggs and vanilla. Beat in the flour mixture until just combined. Stir in the white chocolate and pecans.
- Drop dough by rounded tablespoon 2 inches apart on an ungreased cookie sheet. Bake at 300 degrees F (150 degrees C) for 20-22 minutes until just set.

- In a large bowl, combine the flours, salt, baking powder, baking soda, pumpkin pie spice, and cinnamon. Pour the wet ingredients into the dry ingredients and mix together with a spoon. Fold in mini white chocolate chips.
- Remove the dough from the refrigerator and preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicon baking mat.

- Preheat oven to 350°F. Line 2 large baking sheets with parchment paper; set aside. In a medium bowl the first five ingredients (through salt).
- In a large mixing bowl beat butter with a mixer on medium to high 30 seconds. Add granulated sugar and brown sugar. Beat until combined, scraping bowl occasionally. Add eggs, one at a time, beating well after each addition. Beat in pumpkin and vanilla until combined. Beat in as much of the flour mixture as you can with the mixer. Stir in any remaining flour mixture and the baking pieces.
- Drop dough in 2-Tbsp. mounds 2 inches apart onto the prepared baking sheets. Bake 10 to 12 minutes or until edges are light brown. Cool on baking sheets 2 minutes. Transfer to a wire rack and let cool.
