ANCIENT EGYPTIAN "DATE CANDY" (FOR 2 PEOPLE)

Figs, dates, pomegranates and grapes were the only fruits that could be grown in the hot climate. From: Ancient Egyptian Food and Drink. This recipe was from 1600BC and was found on an ostraca. *NOTE* There are no times given but I'm thinking it would go pretty quickly with the food processor.

Ancient Egyptian

Steps:

  • mix the dates with some water to paste.
  • mix in cinnamon and kardemon seeds.
  • kneed in the walnuts.
  • form balls, spread with honey and cover in the ground almonds.

1 cup of fresh dates
1 teaspoon cinnamon
1/2 teaspoon cardamom seed
1/2 cup of fresh ground walnuts
warm honey
fine ground almonds

GREAT-GRANDMA CATHY'S DATE LOAF CANDY

Handed down from my great-grandmother, and one of my father's all-time favorite holiday treats. Store in the refrigerator (rolled in the cloth), and it will keep for weeks. Otherwise, it becomes hard and sugary.

Great-Grandma Cathy's Date Loaf Candy image

Steps:

  • Stir sugar, milk, and butter together in a saucepan; bring to a boil without stirring once the boiling begins. Heat until a small amount of syrup dropped into cold water forms a rigid ball or until the mixture reaches 250 degrees F (120 degrees C), about 20 minutes. Immediately remove saucepan from heat and stir dates, pecans, and vanilla into the milk mixture.
  • Thoroughly wet a piece of cheesecloth and lay out onto a flat work surface. Pour the candy mixture into the middle of the cloth and roll the cloth around it to shape into a log.
  • Refrigerate until hard, 8 hours to overnight. Remove log from cloth and slice.

My daughter and I came across a date candy recipe when she was learning about ancient Egypt. We changed some of the spices and nuts to suit our taste. My dad was a beekeeper and Mom always made a coconut date ball for Christmas. Almond-Pecan Date Truffles image

Steps:

  • In a microwave, warm apple juice. Stir in dates; let stand 5 minutes to soften, stirring occasionally. Remove dates from apple juice; discard liquid. Transfer dates to the bowl of a food processor fitted with the blade attachment; process until smooth. Add pecans and spices; pulse just until combined (mixture will be thick). , Shape mixture into 1-in. balls; place on a waxed paper-lined baking sheet. Refrigerate, covered, 30-60 minutes., Roll date balls in almonds.

Steps:

  • Put milk and sugar in pan and as soon as it boils, add dates and butter.
  • Boil until it forms a good soft ball in cold water (watch carefully but don't stir more than absolutely necessary).
  • Remove from fire; add nuts and stir. Beat until very stiff.
  • Dip out on a cloth wrung from cold water; knead and mold into a long roll.
  • Let stay in damp cloth until hard and cold.
  • Slice and serve.

3 cups white sugar
1 1/2 cups milk
1 cup dates, seeded, but whole
1 tablespoon butter
1 cup nuts, coarsely chopped

I take no credit for this recipe whatsoever. It was found on a tomb wall in Egypt during an archaeological dig. All I did was adapt the instructions to read a little easier; steps and ingredients are the originals. It is a yummy candy and I just had to share the recipe. If you like dates or figs, you'll love it!

Steps:

  • 1. Mix the dates and a little bit of water in the food processor to a thick paste. Add the cinnamon and cardamom and mix well. In a pie plate or similar flat dish, spread one cup of ground almonds into a layer. Sprinkle a light layer of confectioner's sugar over the almonds. Spread the date mixture over the top, being careful not to disturb the almond layer underneath. Sprinkle another light layer of confectioner's sugar over the date paste. Top with the rest of the ground almonds, pressing lightly into the pan. Keep in the refrigerator to prevent it from spoiling and to keep it from being too sticky. Cut into small pieces.

2 c almonds, chopped
confectioners' sugar

Even though my two grown sons aren't big "sweets eaters", they think these candies are exceptional. The big peanut butter flavor is a hit combined with holiday staples like walnuts and dates.

  • In a bowl, combine the first six ingredients. Shape into 3/4-in. balls; place on a waxed paper-lined baking sheet. Refrigerate for 1-2 hours or until firm. , In a microwave, melt candy coating; stir until smooth. Dip balls in coating and place on waxed paper to harden.
