Steps:

  • Brown 2 ounces diced chorizo in a skillet with olive oil. Add 1/2 diced onion and cook 4 minutes. Stir in 1/2 diced jalapeno, 1 teaspoon each dried oregano, chili powder and minced garlic, and 1 chopped tomato; cook 1 minute. Add a 15-ounce can pinto beans (undrained) and 3/4 cup water; simmer 15 minutes. Season with salt, pepper and hot sauce.

Steps:

  • Preheat oven to 350°. In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the remaining ingredients. Transfer to a greased 13x9-in. baking dish. Bake, uncovered, until heated through, 50-60 minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large pot over medium-high heat. Cook and stir bacon and onion in pot until the onion is tender, 7 to 10 minutes; add ketchup, dry mustard, brown sugar, Worcestershire sauce, hot pepper sauce, salt, and black pepper.
  • Reduce heat to low and cook bean mixture at a simmer until hot, about 10 minutes; pour into a large casserole dish.
  • Bake in preheated oven until bubbling on top, 10 to 15 minutes.

Steps:

  • Pick over the beans, and wash them well. Put them in a kettle, and add the water. Bring to a boil, partly cover and let simmer 1 hour.
  • Add salt and half the onion. Continue cooking, uncovered, about 30 minutes longer.
  • Heat the oil in a small skillet, and add the remaining onion and the jalapeno peppers. Cook briefly until the onion is wilted. Add the tomatoes and coriander, and cook, stirring, about 3 minutes. Scoop out a cup of the beans plus a little of their liquid, and add it to the container of a food processor or electric blender. Blend as finely and thoroughly as possible. Return this to the beans.
  • Add the tomato mixture to the beans and continue simmering about 5 minutes.

I'm always looking for dried bean recipies; even though it takes pre-planning at least the night before making the dish, the beans have more flavor and nutrition than the processed beans from the can. There are directions included in case your beans were not soaked the night before. Cook time does not include overnight soak and has assumed that the quick soak method was used. Adjust the heat, smoke, or salt by stirring in more hot sauce or barbecue sauce at serving time.

Steps:

  • Soak beans overnight -OR- place beans and 6 cups water in large Dutch oven. Bring to boil over high heat and cook for 5 minutes. Remove pot from heat, cover and allow beans to sit for 1 hour. Drain beans. Clean and dry pot.
  • Adjust oven rack to lower-middle position and heat oven to 300°F Add bacon to pot and cook over medium heat until lightly browned, 6 to 8 minutes. Stir in onion and cook until beginning to brown, 6 to 8 minutes. Add brown sugar, mustard, 1/2 cup barbecue sauce, hot sauce, and salt. Return to boil over high heat, cover pot, and transfer to oven.
  • Cook until beans are just tender, 2 to 2 1/2 hours. Remove lid and continue to cook, stirring occasionally, until liquid has thickened to syrupy consistency, 1 to 1 1/2 hours. Remove from oven, stir in remaining 2 tablespoons barbecue sacue, and season to taste with salt and pepper.
  • Beans can be refrigerated in airtight container for several days.

My family eats this as a main dish, usually with cornbread, but it's a wonderful side dish for picnics, potlucks, and camping. We like it sweet, so we add another 1/4 cup of brown sugar, but you could also spice it up by adding jalapenos or another kind of chilies. It's even good cold! It freezes very well, too.

Easy Cowboy Beans image

Steps:

  • Cook bacon until crispy. Drain and crumble. Put in large pot.
  • Brown ground beef and onions together. Drain. Add to pot. (Bacon can be cooked with the ground beef and onions if cut into chunks. I use kitchen shears to just cut through all the slices--into about 1-1/2" chunks.).
  • Add the rest of the ingredients to the pot. DO NOT drain the beans! Stir everything together.
  • Bring to a boil, then turn down heat and simmer for about an hour. If you're going to let it simmer, don't add the lima beans right away, as they tend to fall apart.
  • These are generally better the next day, but are might fine the same day!

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
