ANDALUSIAN CABBAGE STEW

This simple Spanish stew is spiked with a splash of sherry vinegar as you finish cooking it. Serve the stew as a side dish or as a main dish with rice.

Andalusian Cabbage Stew image

Steps:

  • Heat the olive oil over medium heat in a large, lidded skillet or Dutch oven. Add the onion. Cook, stirring often, until tender, about five minutes. Add the garlic and bell pepper. Cook, stirring, until the pepper has softened slightly and the pan is fragrant, about three minutes. Add the cabbage. Cook, stirring, until the cabbage has softened slightly and lost some of its volume, about five minutes. Add the chili pepper, sugar, tomatoes, salt and paprika. Raise the heat slightly, and cook, stirring often, until the tomatoes have cooked down slightly and the mixture smells fragrant, about 10 minutes. Turn the heat to low, cover and simmer 30 minutes, stirring often.
  • Add the vinegar and pepper, and taste and adjust salt. Simmer another 10 minutes. Serve with thick slices of country bread or with rice. This will taste even better if you refrigerate it overnight and serve it the next day.

Linda's Red and Green Cabbage Salad image

Steps:

  • Combine all dressing ingredients, except mayonnaise, in a small pan.
  • Cook over medium heat just until sugar is dissolved, stirring frequently so it doesn't stick.
  • In a lg. bowl, combine all salad ingredients, and mix well.
  • Add dressing, and mix well. Let cool.
  • Add mayonnaise and mix well.
  • Refrigerate at least 2 hours. Stir about every 1/2 hours so flavors meld.

2 cups red cabbage, finely shredded
2 cups green cabbage, finely shredded
1/2 cup carrot, shredded
1/4 cup red bell pepper, chopped
1/4 cup green bell pepper, chopped
1/4 cup green onion, finely chopped
1 cup sugar

1 cup cider vinegar

Salvadoran Cabbage Salad (Curtido) image

Steps:

  • Place the cabbage and carrots in a large heat-proof bowl. Pour the boiling water into the bowl to cover the cabbage and carrots and set aside for about 5 minutes. Drain in a colander, pressing out as much liquid as possible.
  • Return the cabbage to the bowl and toss with the remaining of the ingredients. Let set at room temperature for a couple hours if you like. Then chill and serve as an accompaniment to pupusas or as a side dish.

4 cups boiling water
3 scallions, minced
1/2 cup white vinegar

Steps:

  • In a large bowl, toss the cabbage with the salt. Allow to sit for one hour.
  • Rinse the cabbage in several changes of water. Taste it, if it is too salty, rinse again. Soak the cabbage in a bowl of ice water for 15 minutes. Drain again.
  • Toss the cabbage with the garlic, lemon juice and olive oil. Garnish with the olives if desired.
