Steps:
- Cook pasta according to package directions; drain and set aside.
- Heat a 9-inch skillet over high heat 1 minute; spray with vegetable spray and add olive oil and shrimp, garlic and shallots; cook, stirring constantly, 2 to 3 minutes or until shrimp turn pink.
- Add asparagus and next 4 ingredients; stir in wine, scraping bottom of skillet to loosen any particles, if necessary.
- Add pasta, basil, and remaining ingredients; toss gently.
- Serve immediately.
- (you can drizzle extra virgin olive oil on finished dish if desired).
GARLIC ANGEL HAIR SHRIMP
This was inspired by one of my favorite restaurant pasta dishes. I keep the lemon separate until the end due to a picky family member, but you could add it earlier if everyone likes lemon. Do not use pre-cooked shrimp and don't overcook the shrimp.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until cooked through but firm to the bite, 4 to 5 minutes. Drain, reserving 1 cup of the water.
- Melt 1 tablespoon in a large skillet over high heat. Saute shrimp in hot butter until no longer pink, about 5 minutes. Remove shrimp with a slotted spoon to a bowl, retaining liquid in the skillet.
- Reduce heat to medium-high. Cook onion and garlic in the retained liquid in the skillet until the onions are translucent 5 to 7 minutes. Stir tomatoes into the onion mixture; cook and stir until the tomatoes soften, about 5 minutes.
- Stir asparagus into the tomato mixture and add the reserved water from cooking the pasta; bring liquid to a simmer and cook until the asparagus is tender, about 5 minutes. Add the shrimp and angel hair pasta; stir. Cook until the shrimp is completely opaque in the middle, 2 to 3 minutes more. Season with salt and garnish with Parmesan cheese and lemon wedges.

This is always a hit. The best part is how fast you can whip it up! You could just buy roasted tomatoes in a jar, but I think roasting them yourself gives the dish a very fresh, deep flavor.

- Preheat oven to 400 degrees F (200 degrees C). Prepare a baking sheet with cooking spray.
- Arrange tomato halves onto prepared baking sheet. Drizzle olive oil over the tomatoes; season with salt and pepper.
- Roast tomatoes in preheated oven until edges are crisp, about 35 minutes. Transfer to a cutting board to cool; cut into small chunks.
- Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until cooked through but firm to the bite, 4 to 5 minutes; drain. Transfer to a large bowl.
- Melt butter in a skillet over low heat. Cook and stir onion, garlic, and half the basil in the hot butter until the onion is translucent, about 5 minutes.
- Stir shrimp, tomato chunks, mushrooms, and garlic powder into the onion mixture. Increase heat to medium-low and cook and stir until shrimp are bright pink on the outside and the meat is no longer transparent in the center, about 6 minutes.
- Pour shrimp mixture over the angel hair pasta; top with Parmesan cheese and lemon juice and toss to coat pasta completely. Garnish with remaining basil.

- Cook pasta according to package directions. Meanwhile, place asparagus in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-5 minutes or until crisp-tender., In a large saucepan, saute mushrooms and chives in butter until tender. Stir in the flour, seasoning blend and salt; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add the Swiss cheese; cook and stir until melted. , Drain pasta and place in a large bowl. Add asparagus and cheese sauce; toss to coat. Garnish with Parmesan cheese if desired.

SPRING ASPARAGUS ANGEL HAIR PASTA
Another recipe for a not so local Farmers' Market here in our state. Wish I could go to it every Saturday. I've not tried this but don't want to misplace the recipe.

Steps:
- Rinse the asparagus and remove the bottom inch of the stem.
- Cut the tips into 2 inch pieces.
- Cut the remaining piece julienned.
- Set the asparagus aside.
- Bring a large pot of water to a boil, add salt.
- In a large nonstick skillet, saute the garlic, shallots and red pepper flakes in olive oil, until tender but not browned.
- Add the lemon juice and reduce by half.
- Drop the pasta and the asparagus tips into the boiling water.
- Cook until the pasta is ala dente, about 3 - 4 minutes.
- Drain for a few minutes and add to the pan.
- While the pasta is cooking add the remaining asparagus to the pan with the shallots and saute until they begin to wilt.
- Toss in the chives, the pasta and cook until the remaining water has evaporated.
- Season with salt and freshly ground pepper.
- Remove from heat and add the Parmesan cheese.
- Serve immediately.
- (When I make this a second time, I'm going to add a little lemon zest in step 7).

- Boil asparagus in water for 5 mins, then drain and cool down quickly with cold water.Cut asparagus into 1 inch pieces,set aside.
- In a small skillet melt the butter over med heat and add the onions, garlic and pepper flakes, saute for 5 mins until soft.

- Bring a large pot of water to a boil, and add 1 tablespoon oil. Cook pasta in boiling water until al dente. Place pasta in a colander, and give it a quick rinse with cold water.
- Heat remaining olive oil in a 10 inch skillet over medium heat. Cook garlic, stirring constantly, until the garlic is tender, about 1 minute. Do not let the garlic burn. Add shrimp, and cook for 3 to 5 minutes. Remove shrimp from the skillet, and set aside.
- Stir tomatoes, wine, parsley, and basil into the skillet. Continue cooking, stirring occasionally, until liquid is reduced by half, 8 to 12 minutes. Add shrimp, and continue cooking until the shrimp are heated through, about 2 to 3 minutes. Serve the shrimp mixture over the pasta. Sprinkle with Parmesan cheese.
