CRISPY CREPES WITH APPLE, BRIE AND PROSCIUTTO

- Make the crepes from the recipe above (you'll only need 4 crepes). Preheat oven to 400 degrees. Brush olive oil on 2 baking sheets. Lay 2 crepes side-by-side on each baking sheet. Spread the apple butter on each crepe. Layer apples and prosciutto on each crepe slice. Bake for 10-12 minutes, rotating the baking sheets (top shelf to bottom shelf) halfway through until crisp like a thin pizza. Take the crepes out of the oven and lay a few slices of the brie on top so it melts slightly. Add a handful of watercress or baby lettuce and several turns of freshly ground black pepper.

- In a medium-size mixing bowl, whisk together the flour, milk, egg and salt.
- Heat a large frying pan or wok over medium high heat. When the pan is hot add a teaspoon of butter and lightly coat the surface of the pan with the melted butter.
- Pour one quarter cup of the batter into the pan and tilt the pan with a circular motion so that the batter coats the surface in a smooth and even layer.
- After two minutes, lift up an edge of the crepe with a spatula to see if it is browning. When the underside has begun to brown, flip the crepe and cook the other side until it is also brown; about 2 minutes.
- Repeat steps 3 and 4 to cook the remaining crepes. Serve hot.

SPICED APPLE SLICES / APPLE CHIPS
Spicy, Tart, and Sweet Oven Dried Apples. I like Granny Smiths but use what firm apples you prefer. I made this with candies ginger just pulse in the grinder along with the cardamom. I like the uneven amounts of spices on each slice. This way those that like it can pick the more spiced ones.

Steps:
- Put cardamon in a coffee grinder (Used for spices not coffee. Grind till fine add rest of the sugar and spices give a couple of whirls to mix into a fine powder).
- Lay parchment paper on 2 cookie sheet pans.
- In a storage bag add spices and apples toss gently to coat, shaking excess spices off place on parchment in a single layer. You can sprinkle a little extra sugar on the slices this is optional.
- Dry in a 250 degree oven 1 to 3 hours depending on how juicy the apples are. Turning after 1 hour.
- They come out crisp,sweet and tart.
- Store in an air tight container if for some reason there is any left over.
APPLE, BRIE, AND PROSCIUTTO CREPES
Steps:
- Make the crepes as indicated in the basic recipe. Preheat the oven to 400°F.
- Lay the crepes on a flat surface. Smear the crepes with the apple butter, about 2 tablespoons each. Lay 3 slices of prosciutto in a single layer across the crepes and then add some apple slices. Drizzle a cookie sheet with a little oil and lay 2 crepes side by side on the pan. Bake for 10 to 12 minutes, until crisp like a thin pizza. Take the crepes out of the oven and lay a few slices of the Brie on top so it melts slightly. Add a handful of watercress, some chopped chives, and several turns of freshly ground black pepper. Drizzle with some olive oil before serving.

Steps:
- Boil or cook the chicken.
- GRAVY.
- Heat butter or margarine over low heat until melted.
- Blend in flour and salt.
- Cook over low heat, stirring constantly, until mixture is smooth and bubbly, then remove from heat.
- Stir in broth.
- Heat to boiling, stirring constantly.
- Boil and stir 1 minute.
- Mix chicken, apple, celery, onion, and 3/4 of the thickened broth.
- Place scant 1/2 cup chicken mixture on center of each crepe, then roll up.
- Place crepes seam sides down in ungreased oblong baking dish (13 x 9 x 2'').
- Pour remaining broth over crepes.
- Cook uncovered in 350°F oven until crepes are sightly browned, about 20 minutes.

- Stir together to blend, sour cream, egg yolk and vanilla extract. In a large bowl stir together flour and sugar. Cut in 3/4 cup butter or margarine until like coarse crumbs. Mix in sour cream mixture until well blended.
- Divide dough in half and chill until easy to handle (3 hours or so).
- To Make Filling: In small saucepan, melt the 1 tablespoon margarine. Add apples, raisins, brown sugar and spice and cook, stirring occasionally, until apples are fork tender. Remove excess liquid and cool.
- Roll each piece of dough to about 1/8 inch thickness and cut with 2-1/2 inch round cookie cutter. Place rounds 1/2 inch apart on ungreased cookie sheet. Place (skimpy) teaspoon of filling on each round and fold in half. Seal edges with fork.
- Bake at 350 degrees F (175 degrees C) for 10-12 minutes or until light brown. Remove and cool. Drizzle with lemon sugar icing made with 1/2 cup powdered sugar, 1 teaspoon lemon juice (fresh), 1 tablespoon water. Mix until of drizzling consistency. If too thick, add a little more water, if too thin, a little more confectioners' sugar.

- Preheat the oven to 350°F .
- Unroll dough; separate crosswise into 2 sections. Press each section into 6-inch square, firmly pressing perforations to seal.
- Place the Brie on the center of first dough square. Arrange apple slices on top, and sprinkle the brown sugar on top of the apples.
- Pull up the sides of the bottom dough square, then place the remaining dough square on top of the Brie, apples and brown sugar. Press dough evenly around cheese, pressing to seal completely. Brush beaten egg all over the dough. Place on cookie sheet.
- Bake for 20-25 minutes or until golden brown. Remove from the oven and let it cool for 10 minutes.
