APPLE CIDER-GLAZED HAM
When I wanted to try something new with our holiday ham, I created this cider glaze. It's slightly sweet but still has the spicy flavor my family craves. -Rebecca LaWare, Hilton, New York

- Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Cover and bake at 325° for 2 hours., Meanwhile, in a large saucepan, combine the cider, honey, vinegar and mustard; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring frequently. Stir in the butter, chili powder and apple pie spice. Set aside 1 cup for serving. , Cook the remaining sauce until thickened; spoon over ham. Bake, uncovered, until a thermometer reads 140°, 30-35 minutes longer. Warm reserved sauce; serve with ham

APPLE BUTTER GLAZED HAM
I found this recipe on Mr. Food Everyday Diabetic Recipes. My husband and I made it for Easter 2014. We liked it so much we made it again for Christmas. This will be the only glaze we will use on our hams from now on. It surpasses any purchased glaze.

- 1. Preheat oven to 325°F. Score the ham with a paring knife through the skin and fat in a tight crosshatch pattern. Place the ham, fat side up, in a large roasting pan. Bake 1 hour.
- 2. Whisk the apple butter, mustard, brown sugar, syrup and cloves in a bowl until smooth. At this point you could put in small sauce pan and heat to melt the flavors together. Brush the ham with half the glaze and bake for 15 more minutes.
- 3. Brush remaining glaze over ham and bake another 15 minutes or until ham is heated through. NOTE: At this time you may add sliced pineapple and maraschino cherries, using tooth picks to keep in place.
- 4. Let rest for 15 minutes before carving.

SUNNY'S APPLE-BOURBON HAM GLAZE

- Preheat the oven to 325 degrees F.
- To make the glaze, add the apple cider, brown sugar, bourbon, pumpkin pie spice and cloves to a large pot. Turn the heat to medium high and cook, while stirring, until the liquid reduces and becomes slightly thickened like a glaze, 10 to 15 minutes. Add the butter and stir to melt. Taste and season with salt and pepper.
- Lay out plenty of aluminum foil to wrap the ham in and create a bed for it. Place the ham in the center of the aluminum foil and pull the sides up around it, leaving the top exposed. Pour over half the glaze, getting it into the spirals. Finish tightly wrapping the ham and place it on a rack in a roasting pan. Fill the pan with water, but do not let it touch the bottom of the ham.
- Cook until the internal temperature reaches about 140 degrees F (gauge 15 to 20 minutes per pound). Remember, it is already cooked, so you just need to bring it to temperature without drying it out.
- Remove the ham and raise the oven temperature to 400 degrees F. Pull back the aluminum foil (watch out--it's steamy and hot!!). With a brush and the remaining glaze, slather the top of the ham, allowing the glaze to get into any creases of the spiral you see. Place back in the oven uncovered but still sitting in the foil and roasting pan, an additional 10 to 15 minutes. Remove and rest 10 minutes before serving.
GLAZED HAM WITH ROASTED APPLES

- Make the glaze: Whisk the apple butter, mustard, brown sugar, vinegar and cloves in a bowl until smooth. After 1 hour, 30 minutes, brush the ham all over with some of the glaze and bake 20 more minutes. Add the apples to the pan, cut-side up, and bake, brushing the ham with more of the glaze every 20 minutes, until the ham is crisp and the apples are tender, 1 hour to 1 hour, 30 minutes. (Turn the apples cut-side down in the last 20 minutes.)
- Transfer the ham to a cutting board and let rest 15 minutes before carving. Serve with the roasted apples.

- For the apple butter: In a large stockpot, combine the apples with the apple juice. Cook on low heat until the apples are tender, about 45 minutes. Remove from heat and pass through a fine sieve. Pour the puree back in the stockpot. Bring to a simmer and add the brown sugar, cinnamon, nutmeg, and lemon juice. Cook on low heat for about 1 1/2 hours until it's reduced by half and thickens up, stirring regularly and skimming the surface if necessary. Remove from heat and let cool.
- For the ham: Put the ham, carrot, celery, leek, onion, and garlic in a large stockpot and cover with water. Bring to a boil and let simmer for 2 hours. Drain and place into a roasting pan.
- Preheat the oven at 350 degrees F.
- In a bowl, combine the apple butter, honey, and Dijon mustard. Peel off the skin of the ham and brush it with apple butter mixture. Pour the water in the bottom of the pan. Place in the oven and cook for 1 1/2 hours, making sure to baste it with the sauce every 15 minutes during cooking process. Remove the ham from the grill and let sit for 10 minutes before carving.

- Preheat oven to 425°F. Line a 15x10x1-inch baking pan with foil; lightly coat with cooking spray. Set pan aside. In a large bowl combine sweet potatoes and Brussels sprouts. - Preheat the oven to 325°F. You can use a roasting rack or not, but you will need a roasting PAN either way. If you are using the roasting rack, situate it in the pan and lay the ham on its side. If you are not using the roasting rack just lay the ham on its side in the pan while you prep it.
- Whisk together the apple butter, apple juice (or orange juice), and spicy mustard. Reserve a 1/2 cup for serving with the ham. Pour the remaining glaze over the ham and use a brush or your hands to separate the slices just a little so the glaze can penetrate between the slices. Cover as much of the outside of the ham that you can with it on its side.
- If you are not using a roasting rack, place the cut side down in the pan and then cover the pan tightly with foil. If you are using a rack, leave the ham on its side in the rack. Add about an inch of water to the bottom of the pan and THEN cover the pan tightly with foil.
- Bake the ham for 12-15 minutes per pound, or about 2 hours. You want the internal temperature to read 140°F.
