APPLE, ONION & CELERY STUFFING RECIPE
The apples, celery and onion in this stuffing make it absolutely delicious!

Steps:
- Preheat oven to 375 degrees F.
- Melt 6 Tablespoons butter in a large saucepan over medium heat.
- Add celery, onion, apples, bay leaves and salt and pepper and cook until softened (about 10 minutes). Remove bay leaves.
- Add dry stuffing, poultry seasoning and chicken stock. Stir until stuffing absorbs the liquid.
- Spray a casserole dish with nonstick cooking spray and fill with stuffing.
- Use the rest of the butter to dot the top of the stuffing.
- Bake for 30-40 minutes, or until golden brown and crispy at the edges.

HERB AND APPLE STUFFING

- Preheat oven to 300 degrees F.
- Put the bread cubes on a 13 by 18 by 1-inch baking sheet and bake them in the oven for 7 minutes.
- In a large saute pan, melt the butter and add the onion, celery, apples, parsley, rosemary, salt, and pepper. Saute for 10 minutes, until the mixture is soft.
- Combine the bread cubes and cooked vegetables in a large bowl and add the chicken stock, and almonds, if desired.
- Place the stuffing into the main cavity of the turkey and into the neck of the bird. I cook a 12-pound turkey for 2 1/2 hours at 350 degrees F in a preheated oven. Make sure the stuffing in the cavity is secured by wrapping the legs tightly with string.
HAM-STUFFED APPLES

Steps:
- Cut the tope off the apples and scoop out the core with some of the fruit, but be sure to leave a thick shell to hold the stuffing.
- Preheat the oven to 350 degrees.
- Put approximately 1 cup of the removed apple fruit in a mixing bowl and combine it with the ham, butter, raisins, pecans and brown sugar; mixing the ingredients well.
- Spoon this mixture into the cored apples and place them in a baking dish.
- Pour the juice over the apples and bake for 35 to 40 minutes, basting occasionally with the juice.

- Soften the onions and the apples with the garlic, celery and thyme in four tablespoons butter.
- In a separate pan, brown the giblets in the remaining tablespoon butter. Remove the liver and add the stock. Simmer over low heat for 45 minutes, or until the heart and gizzard are tender. Reserve the cooking liquid. Dice the heart, gizzard and liver and set aside.
- Place the bread crumbs in a large bowl. Add the onion-celery mixture and the giblets. Add the walnuts, parsley and sage and add enough stock to moisten the stuffing. Season to taste with salt and pepper.
