- Cut pastry sheet in half. Repackage and refrigerate one half for another use. On a lightly floured surface, roll out remaining half into an 8-in. circle. Transfer to a 7-in. pie plate; flute edges., In a large bowl, combine the apples, 1 tablespoon sugar and cinnamon; place in crust. In a small bowl, combine the flour, walnuts, raisins, butter, egg and remaining sugar; spoon over top. Bake at 350° for 50-55 minutes or until topping is golden brown and fruit is tender, covering edges with foil to prevent overbrowning if necessary. Cool on a wire rack.

HONEY BAKED APPLES WITH RAISINS AND CINNAMON
This dish is well suited to apples with a high moisture content, such as Jonagold, Braeburn and Gala; they soften nicely and produce a full-flavored juice that can be spooned over the top of the apples when served.

- In a medium saucepan, combine the apple cider, brown sugar, honey, cinnamon, salt, and pepper. Bring to a boil, reduce heat, and simmer for about 25 minutes or so, or until mixture is syrupy and reduced to about 2 2/3 cups.
- Preheat the oven to 350 degrees F. Put the apples, cut side down, in a 12-inch baking pan. Distribute the raisins, apricots, cloves, star anise, and cinnamon sticks, if using, over the apples. Pour the hot syrup over the apples. Cover the pan with aluminum foil.
- Bake 25 to 30 minutes, or until the apples are almost tender when pierced with the tip of a sharp knife. Remove from the oven, turn the apples over, add the brandy. Baste apples with the apple cider and apple brandy many times, allowing the apples to absorb the flavor. Let the pan stand, covered, for 15 minutes. Serve baked apples with the liquid and dried fruits spooned over them in a bowl. Served with whipped heavy cream or ice cream and a sprinkle of powdered sugar.
APPLE, RAISIN & CINNAMON CLANGER
Try something different for dessert with this clanger - it's like a giant steamed pudding or stuffed roly-poly. Here, ours is filled with spiced apples

- Mix the flour, sugar, suet and ½ tsp salt together in a bowl. Crack in one egg and slowly add 150ml ice-cold water, stirring to make a pliable dough. Knead briefly to bring together, then wrap and leave to rest while you make the filling.
- Tip the grated apples into a bowl, then stir in the cinnamon, melted butter, sultanas and sugar until well-combined. Set aside (don't worry if it starts to turn brown).
- Heat the oven to 200C/180C fan/gas 6. Roll the pastry out on a floured surface to a 30 x 25cm rectangle, with a long side closest to you. Spoon the apple filling along the long side, leaving a 2cm border from the edge. Beat the second egg and brush some of this over the exposed pastry edge, then fold the edge over to encase the filling. Roll the pastry up into a tight roll, then put the kettle on to boil.
- Wrap the whole roll in a large piece of baking parchment and twist the ends like a Christmas cracker. Twist again to tighten, then secure the ends with kitchen string. Put on a wire rack inside a large roasting tin, pour in 1 litre of freshly boiled water from the kettle and sit the clanger on the rack. Cover the whole tin tightly in a tent of foil, then transfer to the oven and bake for 1 hr.
- Once the clanger is steamed, carefully remove from the tin. Will keep chilled for up to a day. Unwrap the clanger, transfer to a baking tray, brush all over with more of the beaten egg, scatter liberally with more demerara sugar and bake for 20 mins more until deep golden. Serve with custard.

- Tip the oats, raisins and cinnamon into a large bowl, pour on 800ml cold water, cover and leave to soak overnight.
- The next day, tip the contents of the bowl into a pan and stir in the apple. Cook over a medium heat, stirring frequently, for 5 -10 mins until the oats are cooked and the apple is soft but still has a bit of bite and texture. Reserve half for the next day and spoon the remainder into bowls. Top each portion with a spoonful of yogurt and dust with some cinnamon.

- Preheat oven to 350°F. Mix flour, oats, 2 Tbsp. of the brown sugar and 1/4 tsp. of the cinnamon in medium bowl. Cut in butter until mixture resembles coarse crumbs; set aside.
- Mix water, remaining 1/2 cup brown sugar, the raisins, tapioca, remaining 1 tsp. cinnamon and the nutmeg in large saucepan. Stir in apples. Cook on medium heat until mixture comes to full boil, stirring constantly. Pour into 8-inch square baking dish; sprinkle with flour mixture.

- Preheat oven to 375°F. Butter 9 x 13 1/2-inch glass baking dish.
- For Topping:

EASY CINNAMON APPLE RAISIN BREAD
This is an easy and delicious bread to prepare. Even better you only need one mixing bowl because you can throw all of the ingredients right in! Feel free to tweak the ingredients to your liking...add more cinnamon...add nuts, etc. I hope you enjoy it! Edited: I have also tried out the bread by using 1/2 whole wheat pastry flour and 1/2 regular flour, a tbl of wheat germ and less sugar to make it a tiny bit "healthier". It came out just as nice as the original.

- Preheat oven to 350 degrees.
- Take peeled and chopped apples and place them in a micowave safe bowl.
- Add water to the apples and microwave for 1 to 1 1/2 minutes.
- Combine apples and all remaining ingriendients and mix thoroughly.
- Pour mixture into a greased loaf pan.
- Bake for 1 hr to 1 hr 15 minutes.
- When done let sit for 15 mins before removing from pan and placing on a wire rack.
