Steps:

  • In a large bowl, toss apple with cinnamon. Add sausage; mix lightly but thoroughly. Shape into 20 balls; insert a raisin in each meatball., In a large skillet, heat oil over medium heat; cook meatballs in batches until cooked through, turning occasionally., Place buns on baking sheets, cut side up; top with cheese. Broil 3-4 in. from heat 1-2 minutes or until cheese is melted. Top with meatballs.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, gently mix by hand the ground beef, bread crumbs, Italian seasoning, garlic, parsley, Parmesan cheese, and egg. Shape into 12 meatballs, and place in a baking dish.
  • Bake for 15 to 20 minutes in the preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, and season with garlic powder and salt. Slip the baguette into the oven during the last 5 minutes of the meatball's time, or until lightly toasted.
  • While the bread toasts, warm the spaghetti sauce in a saucepan over medium heat. When the meatballs are done, use a slotted spoon to transfer them to the sauce. Spoon onto the baguette and top with slices of provolone cheese. Return to the oven for 2 to 3 minutes to melt the cheese. Cool slightly, cut into servings, and enjoy!

Steps:

  • Combine the crushed tomatoes, tomato paste, bay leaves and parmesan rind in a 6-quart slow cooker. Add 1 cup water, 1/4 cup parsley, 2 chopped garlic cloves, 1/2 teaspoon salt and a few grinds of pepper.
  • Combine the breadcrumbs and milk in a medium bowl; soak 2 minutes. In a separate bowl, combine the beef, eggs, 1 cup parmesan, the remaining 1/4 cup parsley and 2 chopped garlic cloves, 1 teaspoon salt and 1/2 teaspoon pepper. Add the breadcrumb-milk mixture and mix with your hands until combined. With damp hands, shape into 24 meatballs, about 1 1/2 inches each; transfer to the slow cooker.
  • Add the sausage pieces to the slow cooker, then cover and cook on low, 7 hours. Remove the bay leaves and parmesan rind and stir in the remaining 1/2 cup parmesan. Season with salt and pepper. Serve on the bread and top with mozzarella.

Apple, Cheddar and Sausage Sandwiches image

Steps:

  • Heat 12-inch nonstick skillet over medium heat. Divide sausage in half and shape into flat patties slightly bigger than the diameter of each bread slice. Place patties in hot skillet and cook about 8 minutes, turning once, until pork is no longer pink in center. Drain on paper towel-lined plate. Drain fat from skillet and wipe out with a wadded paper towel.
  • In same skillet, heat oil over medium heat until hot. Break each egg into skillet and sprinkle with salt and pepper if desired. Cook until whites of eggs are set. Flip eggs so yolks face down (flip eggs away from you to avoid being splashed with hot oil). Use tip of spatula to pierce each yolk. Cook eggs 1 minute or until yolks are set. Remove eggs from skillet and place directly on top of sausage patties on paper towels.
  • Spread 2 tablespoons apple butter on one side of 2 bread slices. Top each slice with sausage and egg. Sprinkle each with 1/4 cup cheese. Cover with remaining bread slices. Spread half of the butter over the top slices of bread.
  • In same skillet, place sandwiches butter sides down. Spread remaining butter over top slices of bread. Cook uncovered over medium heat about 5 minutes or until bottoms are golden brown. With spatula, carefully turn sandwiches over. Cook 2 to 3 minutes longer or until bottoms are golden brown and cheese is melted. Serve hot.

Applesauce Meatballs image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine applesauce, egg, bread crumbs, and salt and pepper, with ground beef; mix until well blended. (This is best done by hand.) Form mixture into medium-sized meatballs, and roll in flour.
  • Heat 1 teaspoon of oil in a large skillet over medium high or high heat. Cook meatballs, turning occasionally, until evenly browned but not cooked through. Transfer to a baking dish and set aside.
  • In the same skillet, partially cook the carrots and onions over medium high heat. Add tomato juice, season to taste with salt and pepper, and bring to a boil. Reduce heat, and simmer for 5 minutes, then pour over meatballs.
  • Cook, covered, in the preheated oven for 45 minutes, or until carrots are tender and meatballs are cooked through. Cook uncovered for 10 minutes before removing from the oven.
