ASIAGO CHEESE AND ARTICHOKE DIP

Steps:
- Heat oven to 350°F. In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Beat in sour cream, half-and-half and salt. Stir in Asiago cheese, artichoke hearts and onions. Spoon into 1-quart casserole or small ovenproof serving dish.
- Bake uncovered 10 to 15 minutes or until hot and cheese is melted. Remove from oven; stir. Sprinkle with parsley. Serve with breadsticks.

ASAGIO SPINACH AND ARTICHOKE DIP FOR GAME DAY
This is a fave at all parties. I serve it up in a nice bread bowl, surrounded with the chunks of bread left over from the bowl and with some tasty sesame and wheat crackers! The asagio cheese totally makes this dip a winner! You can serve this chilled or warm its a matter of preference. I have included directions for both.

Steps:
- 1. Mix first five ingredients together in a medium bowl.
- 2. Add remaining ingredients and mix all together well.
- 3. Season with salt and pepper and garlic powder. Add a pinch of cayenne pepper if you like a bit of heat. (I like to make this the day before the party and refrigerate so the flavors have time to combine) FOR a hot version: Pour into a 9 x 9 baking dish and bake in preheated 350 degree oven for about 30 minutes. Serve warm
- 4. Serve with crackers, tortilla chips, pita chips and/or in a bread bowl

- Mash up the artichoke hearts in a bowl along with the minced garlic.
- Add the other ingredients.
- Mix it all together and refrigerate until using.
- All the proportions can be tweaked according to personal preference. You can also serve this recipe hot! The cheese gets all melty and yummy!

- Preheat oven to 425°F. Beat the cream cheese, mayo, and yogurt together until smooth. Add the white and light parts of the green onions (dark green parts will be used for the pico), lemon juice, and 1 1/4 cup grated cheese. Fold in artichokes and crab. Season to taste with salt and pepper. Transfer to a 1 1/2 quart casserole dish and spread evenly, sprinkling the remaining cheese on top.. Bake for about 20 minutes, until bubbly and golden brown. To make the pico, toss all ingredients together and set aside until ready to serve. Remove the dip from the oven, top with pico, and serve with blue corn tortilla chips, crackers, or toasted crostini. Best when hot or very warm, leftovers will keep a couple of days. Can be assembled ahead of time and then baked at the last minute.

- Preheat oven to 350 degrees F.
- In a food processor, combine cream cheese, asiago cheese and garlic; process briefly, scrape down and then process until well combined.
- Drain artichoke hearts, squeezing each one slightly.
- Add hearts, peppers, mushrooms and green onions to processor.
- Pulse to finely chop and combine all the ingredients.
- Transfer to a shallow baking dish or pie plate.
- Cover with foil and bake for 30 minutes.
- Serve with toasted pita bread, french bread or crackers.

- Preheat oven to 350 F degrees. Spray a 9" pie plate or 9" cast iron skillet with non-stick cooking spray and set aside.
- Add artichoke hearts to a mesh sieve and lay a few paper towels on top. Press down to remove any excess liquid. Transfer artichokes to a cutting board and chop. Set aside.
- To a small skillet, add bacon strips and cook over MED to MED-LOW heat until bacon is crisp and brown. Remove to a plate, reserving drippings, and add diced onion to the skillet with the reserved bacon drippings. Raise heat to MED-HIGH and cook 3-5 minutes, until soft and starting to brown. Add spinach and garlic to the skillet and cook another minute, until spinach is wilted. Set aside.
- To a large mixing bowl, add sour cream and flour. Stir together, then add in mayo, chopped artichoke hearts, roasted red peppers, bacon, and cooked spinach and onion mixture. Stir together, then add in mozzarella cheese, 1/2 cup asiago cheese, and black pepper. Stir to combine.
