ASIAN CHICKEN CABBAGE ROLLS
Found this in a flyer for Canadian Chicken farmers, tried it last week and they are good! Packed with flavour, nutrition and value for your money, 1 lb minced chicken feeds 6!

Steps:
- Using sharp knife, remove core from cabbage.
- In a large pot of boiling salted water, blanch cabbage for 10 to 15 minutes or until leaves are softened.
- With tongs, remove and chill in cold water; set aside on towel, core down, to drain.
- Filling: In large nonstick frypan, heat oil over medium high heat; cook onions, garlic and ginger, stirring, for 3 minutes.
- Add mushrooms; cook stirring, for 5 minutes or until liquid is evaporated.
- Add chicken; cook, stirring and breaking up with wooden spoon, for about 5 minutes or until no longer pink.
- Add red pepper, coriander, soy sauce and hot pepper sauce; cook, stirring, for 1 minute.
- Remove from heat; stir in rice.
- Let cool slightly.
- Stir in egg.
- Working from core end of cabbage, carefully remove 12 leaves, trim off coarse backbone.
- Spoon about 1/3 cup filling onto each leaf.
- Fold end and sides over filling; roll up.
- Place rolls in single layer in large casserole dish.
- Sauce: In bowl, stir together tomatoes, vinegar, sugar, soy and oyster sauces, ginger and sesame oil.
- Pour over cabbage rolls.
- Cover and bake in 350°F oven for 40 minutes.
- Uncover and baste with sauce; cook, uncovered for 20 minutes longer or until sauce is bubbling and rolls are tender.
GINGERY CABBAGE ROLLS WITH PORK AND RICE
These fork-tender cabbage rolls, filled with savory pork, rice and ginger, are the ultimate comfort food - perfect to serve as a cozy meal on a cold night. When assembling the rolls, you can simply fold the cabbage leaf onto itself as you would fold a burrito - and don't worry if the cabbage leaves tear. If there are any leftovers, reheat them with more chicken broth. They are good the day they are made, but even better the next day.

- Heat oven to 350 degrees. Bring a large pot of water to a boil and season with salt.
- Prepare the cabbage: Remove about 12 large outer leaves, reserving the rest of the cabbage for another use. Once the water boils, lower the heat to medium so that the water reaches a gentle boil. Add the cabbage leaves, about 4 at a time, and cook until tender and flexible but leaves remain intact and maintain their crunch, about 2 minutes. Transfer to a towel-lined plate and set aside to cool slightly while you make the filling. Repeat with remaining cabbage leaves.
- Prepare the filling: In a large bowl, combine pork, rice, egg, scallions, ginger and soy sauce with 2 teaspoons salt and 1 teaspoon pepper.
- Assemble the cabbage rolls: Working with one cooked cabbage leaf at a time, place it on a cutting board or other flat surface with its stem end at the bottom. Spoon a heaping 1/4 cup of the pork mixture in the center and mold the mixture into a rough 2- to 3-inch log. Pull the stem end over the meat mixture, and fold the right and left sides of the leaf over and roll tightly to the very top. Place the cabbage rolls seam-side down in a large Dutch oven or ovenproof, straight-sided saucepan. Repeat with the remaining cabbage and pork filling.
- Pour the chicken broth over the cabbage rolls and bring to a boil over medium. Cover the pan, transfer to the oven, and bake until cabbage rolls are fork tender and the meat mixture is cooked through, 40 to 45 minutes. Serve with ladles of broth over the rolls and a drizzle of sesame oil.

I adapted this from oh noel!'s Japanese Cabbage Rolls recipe. I added a lot of extra flavorings to suit my taste.

Steps:
- Steam cabbage leaves until limp. Set aside to cool.
- Meanwhile, in a small bowl, mix meat, vegetables (except shiitake stems), ginger, garlic, salt and five spice powder until well combined. Divide into portions, one for each cabbage leaf.
- One by one, place a portion of meat filling at one end of a cabbage leaf and roll, tucking in edges as you go.
- Combine broth, soy sauce, shiitake stems and chili flakes in a pot big enough to fit rolls in one layer. Bring to a simmer and gently add cabbage rolls. Cover and cook over low heat for about 10-12 minutes, turning rolls once.
- Serve over rice, with cooking broth and extra soy sauce on the side for dipping.
