PEKING-STYLE ROAST TURKEY WITH MOLASSES-SOY GLAZE AND ORANGE-GINGER GRAVY

Peking-Style Roast Turkey with Molasses-Soy Glaze and Orange-Ginger Gravy image

Steps:

  • Steam the turkey:
  • Preheat the oven to 400°F. Season the inside of the turkey with salt and pepper and tie the legs together. In the bottom of a large pot fitted with a small round rack or crumpled foil, bring 8 cups water to a boil over high heat. Reduce heat to medium low and lower the turkey into the pot. Cover and steam for 30 minutes.
  • Meanwhile, make the glaze: In a medium saucepan, melt the butter. Whisk in 1/2 cup orange juice, soy sauce, molasses, vinegar, and 5-spice powder. Bring to a boil, reduce the heat to medium, and cook until the glaze is slightly thickened, 6 to 8 minutes.
  • Roast the turkey:
  • In a large roasting pan, toss the scallions, celery, and reserved orange peels with the oil and season with salt and pepper. Fit a roasting rack over the vegetables and place the turkey on top. Brush all over with the glaze, lower oven to 350°F, and roast the turkey, basting every 20 minutes, until a thermometer inserted in the thigh registers 165°F, about 2 hours. If the turkey is browning too quickly, tent with a piece of foil. Let the turkey rest about 20 minutes before carving.
  • Make the gravy:
  • While the turkey is cooking, in a large saucepan over medium-high heat, heat the oil. Add the turkey neck, gizzard, and liver and cook until browned on all sides, 8 to 10 minutes, flipping occasionally; season with salt and pepper. Lower the heat to medium and add the shallot, garlic, ginger, cloves, star anise, and allspice, and cook until the vegetables are softened, 2 to 3 minutes. Add the broth and bring to a boil, scraping the browned bits from the bottom of the pan. Lower the heat to medium-low and simmer, uncovered, until the stock is flavorful and slightly reduced, about 1 hour. Strain the broth into a large clean saucepan and set aside on the stovetop to keep warm.
  • In a large pot, melt butter over medium heat. Sprinkle the flour over the butter and whisk to combine. Cook, stirring frequently with a wooden spoon, until butter mixture is browned, 2 to 3 minutes. Whisk in the broth and bring to a boil. Reduce to a simmer and cook until gravy is thickened, 15 to 20 minutes.
  • Once the turkey has been removed from the roasting pan, strain the drippings into the pot with the gravy, discarding the solids. Place the roasting pan over two burners over medium-high heat. Pour in the wine and orange juice and bring to a boil. Scrape up brown bits on the bottom of the pan, and cook until reduced, about 1 minute. Pour pan juices into the gravy. Season with salt and pepper and serve with the turkey.

For the turkey:
One 12- to 14-pound turkey (neck, gizzard, and liver reserved), left at room temperature for 1 hour
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter, melted
3/4 cup orange juice (from 2 oranges), divided (reserve peels for roasting pan and 1/4 cup juice for gravy)
1/4 cup soy sauce
2 tablespoons molasses

2 tablespoons 5-spice powder
1 bunch scallions, cut into large pieces
1 celery stalk, cut into large pieces
2 tablespoons vegetable oil, such as grapeseed
For the gravy:
1 tablespoon vegetable oil, such as grapeseed
Reserved turkey neck, gizzard, and liver
Kosher salt and freshly ground black pepper
1 shallot, chopped
2 garlic cloves, smashed
One 2-inch piece ginger, sliced
2 cloves
1 whole star anise
1 allspice berry
4 cups low-sodium chicken or turkey broth
4 tablespoons unsalted butter
1/4 cup all-purpose flour
3/4 cup dry white wine
1/4 cup fresh orange juice (reserved from above)
Special equipment:
a large stock pot or lobster pot (16-quart or larger), a roasting pan with rack, kitchen twine

SPICED ROASTED TURKEY

Pushing a buttery spice paste underneath the turkey's skin allows the flavor to perfume the meat-and gives it extra juiciness. Here, we use the favorite Indian combination of garlic and ginger paste, along with the technique of toasting spices and then grinding them, for the freshest, most powerful result. Though the paste may smell pungent, its flavor, once the turkey has been cooked, is quite gentle.

Spiced Roasted Turkey image

Steps:

  • Make turkey:
  • Preheat oven to 450°F with rack in lowest position.
  • Toast spices with sea salt in a dry small heavy skillet over medium-low heat, stirring occasionally, until fragrant and coriander is a shade darker, 8 to 10 minutes. Transfer to grinder and pulse until finely ground. Reserve 1 teaspoon spice mixture, then stir together remaining spice mixture with grated ginger, garlic, and butter to form a paste.
  • Rinse turkey inside and out, then pat dry. Fold neck skin under body. Starting at large cavity end of turkey, gently slide your fingers between skin and flesh of breast and legs to loosen skin, being careful not to tear skin. Using a spoon, slide spice paste under skin of turkey breast and legs, pushing butter out of spoon with a finger on outside of skin (do not put spice paste under turkey skin in advance). Tie drumsticks together with kitchen string and tuck wings under body.
  • Pat giblets and neck pieces dry and cut into 1-inch pieces. Heat vegetable oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then sauté giblets and neck pieces, stirring occasionally, until golden, about 5 minutes. Add scallions, carrots, celery, and sliced ginger and sauté, stirring, until lightly browned, about 8 minutes.
  • Add rice wine and boil, stirring and scraping up any brown bits, 1 minute. Stir in 4 cups broth, soy sauce, and reserved teaspoon spice mixture and bring to a boil. Pour mixture into roasting pan, then set rack in roasting pan, arranging neck pieces and vegetables around rack as necessary (liquid should be just below bottom of rack).
  • Roast turkey on rack, rotating pan 180 degrees halfway through roasting, until an instant-read thermometer inserted into fleshy part of thighs (test both, close to but not touching bone) registers 170°F, 1 1/2 to 2 hours.
  • Carefully tilt turkey so juices from inside large cavity run into roasting pan, then transfer turkey to a platter, reserving juices in roasting pan. Let turkey stand, uncovered, 30 minutes (temperature of thigh meat will rise to 175°F).
  • Make gravy while turkey stands:
  • Strain pan juices through a large fine-mesh sieve into 1-quart measure, pressing hard on and then discarding solids, and let stand until fat rises to top. Skim off and discard fat. (If using a fat separator, pour pan juices through sieve into separator and let stand until fat rises to top, 1 to 2 minutes. Carefully pour pan juices from separator into measuring cup, discarding fat.) You should have 4 cups stock. If there is less, add more broth. If there's more, boil to reduce. Transfer all but 1/2 cup stock to a heavy medium saucepan and bring to a boil.
  • Whisk together cornstarch and 1/2 cup reserved stock in a small bowl until smooth, then whisk into boiling stock and boil, whisking occasionally, 2 minutes. Serve turkey with gravy.

  • Two to three days before roasting, start thawing your turkey in the refrigerator. On the day before you plan to roast it, make the marinade by combining the garlic, salt, soy sauces, wine, sugar, white pepper, five spice powder, sand ginger powder, and sesame oil in the food processor. Pulse until you can’t see any more big chunks of garlic in the mixture.
  • Spread out the onion wedges in the bottom of your roasting pan. The onions will serve as the “rack” that the turkey will sit on.
  • Remove the turkey from the package. Remove the neck and the giblets from the turkey cavity and give the bird a good rinse with cold water. Pat it thoroughly dry with paper towels, and lay it breast side down in the pan. Spread half of your marinade all over the bottom side of the turkey, making sure you cover every surface and crevice (including the cavity). Flip the bird over so it's laying breast side up, and spread the other half of the marinade over this side of the turkey. Also spread some of the marinade on the neck and giblets, and add those to the pan as well.
  • Cover the roasting pan tightly with plastic and allow the turkey to marinate breast side up overnight.

  • First, thaw your turkey. Make sure you provide plenty of time for this step. It’s best to let your turkey thaw overnight in the kitchen sink a couple of days before Thanksgiving (if it’s frozen solid) or the day before you’re going to cook it (preferably the morning, as it will still need to marinate). When the turkey is completely thawed, remove it from the wrapper, and if the inside of the turkey is still frozen, run some warm water into the cavity and let it sit for a few more hours to thaw. If you’re in a hurry, you can soak the turkey in lukewarm water to aid the thawing process.
  • This is the single most important step to ensuring your turkey cooks evenly. Be sure to also remove the giblet package in the cavity and thoroughly rinse the cavity and outside of the turkey. Next, drain all of the water from the cavity, and pat the whole turkey dry with paper towels. You can also let it drip dry on a rack.
  • Make the marinade by mixing together ¼ cup ground bean sauce, 3 tablespoons hoisin sauce, 4 teaspoons minced garlic, 1 tablespoon finely minced shallot, 2 teaspoons minced fresh ginger, 1½ tablespoons salt, 3 tablespoons Shaoxing wine, and 1 teaspoon five spice powder.
  • Rub the turkey down inside and out with the marinade, ensuring all surfaces are thoroughly coated. Work the marinade under the skin where possible. If you think you have too much marinade, use the surplus amount in the cavity. Finish the turkey by placing the Chinese dried tangerine peels into the cavity.
