GRILLED SHRIMP SKEWERS WITH SOY SAUCE, FRESH GINGER AND TOASTED SESAME SEEDS

Grilled Shrimp Skewers with Soy Sauce, Fresh Ginger and Toasted Sesame Seeds image

Steps:

  • Soak 4-inch wooden skewers in cold water for 1 hour. Thread 1 shrimp onto each skewer so that the shrimp lie flat.
  • Whisk together the soy, garlic, ginger, sesame oil, white wine vinegar, lime juice and peanut oil together in a small bowl. Place shrimp skewers onto a plate and drizzle with peanut oil to lightly coat. Season with salt and pepper.
  • Heat grill. Grill shrimp 2 minutes per side or until just cooked through. Place shrimp on a platter, drizzle with vinaigrette and sprinkle with sesame seeds.

Wooden skewers (4-inch)
24 large shrimp
1/2 cup light soy sauce
2 cloves garlic, finely chopped
1 tablespoon grated fresh ginger
1 tablespoon toasted sesame oil
2 tablespoons white wine vinegar
1 tablespoon fresh lime juice
1/4 cup peanut oil, plus extra for drizzling
Salt and pepper
2 tablespoons toasted sesame seeds

Steps:

  • In a medium bowl, mix all ingredients shrimp through garlic. Marinate shrimp in mixture in refrigerator for no longer than 20-30 minutes. (Seafood requires very little marinating time) Remove shrimp from marinade and place on skewers. Grill over medium-high heat two -three minutes per side. Take reserve marinade and heat in small saucepan, or in microwave safe dish and cook until reduced by half and marinade is a few syrupy spponfuls. Drizzle over cooked shrimp after it has been removed from the grill. Sprinkle with sesame seeds and green onions.

1 lb large shrimp, peeled and de-veined with tails removed

¼ tsp red pepper flakes
2 cloves crushed garlic
1 TSBP sesame seeds, toasted
4 green onions, chopped

Ginger-Soy-Lime Marinated Shrimp image

Steps:

  • Place shallots, ginger, garlic, soy, lime juice, and sugar in a blender and blend until smooth. Add the green onion and oil and blend until combined. Season with black pepper, to taste. Place shrimp in a large bowl, pour the marinade over, and let marinate at room temperature for 20 minutes.
  • Preheat a grill to high. Remove shrimp from the marinade and grill for 1 1/2 to 2 minutes per side. Serve on brown paper bags, if desired.

Amazing Spicy Grilled Shrimp image

Steps:

  • Whisk together the olive oil, sesame oil, parsley, hot sauce, minced garlic, ketchup, chile sauce, salt, pepper, and lemon juice in a mixing bowl. Set aside about 1/3 of this marinade to use while grilling.
  • Place the shrimp in a large, resealable plastic bag. Pour in the remaining marinade and seal the bag. Refrigerate for 2 hours.
  • Preheat an outdoor grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 2 minutes per side until opaque, basting frequently with reserved marinade.

  • Place all ingredients except for the shrimp in a sauce pan over medium heat. Let come to a simmer then take off the heat and let cool on the counter.
  • Place shrimp and marinade in a bag or bowl covered in plastic wrap and marinade for at least an hour in the fridge. Try to let marinade around 3-5 hours but not longer.
  • Take shrimp out of marinade and place on skewers. If using wooden skewers, let these soak over night in water.
  • Grill over high heat until just cooked. Do not overcook or shrimp will become rubbery. This will only take about 3-4 minutes per side, depending how big the shrimp are. You can baste the shrimp with the marinade when they first hit the grill but after that, toss out the marinade.
