ASIAN STYLE OVEN BAKED DUCK LEGS

I bought a bag of duck legs recently. There were 10 of them in a 2kg bag, all beautifully trimmed and ready to cook. Normal eaters might eat one each but we ate two and our son ate 3 of them!

Steps:

  • Marinate duck in remaining ingredients for about 8 hours (from the morning until dinner time is good). Turn occasionally through the day.
  • Heat oven to 160c/330f.
  • Remove the duck from the marinade and lay on a foil lined baking sheet.
  • Bake for 2 hours or until very tender.
  • You may need to pour off the fat a couple of times during the cooking time.
  • I served our duck on rice with Oriental Noodle Salad.

ROASTED DUCK LEGS AND POTATOES

This is one of those leave em' and love em' meals. For all the ease of the express-style food, there is something to be said for simply stashing something in the oven for an hour or two when stuck in too-tired-to-cook mode. True, one needs a little patience, which might make this more of a lazy weekend dinner than the answer to your everyday exhaustion issues. You don't need to serve much alongside, perhaps no more than a fennel salad dressed with a spritz or two of orange juice and a squeeze of lime, or some bitter green salad leaves. When you're in a hurry, a duck breast can seem like the solution, but the leg, cheaper yet richer, is more of a treat for those who like to eat. Of course, it's fattier than the appropriately named leaner magret: that's what makes the leg taste better. And please - enough with the supposed health concerns. I mean: it's not as though the obesity-epidemic was caused by the overconsumption of duck legs. Besides, as the late great James Beard sniffily wrote "A gourmet" - and that's him, not me, I'm just greedy - "who looks at calories is like a tart who looks at her watch."

Steps:

  • Preheat the oven to 400 degrees F.
  • On the stove, heat a small roasting pan (I use one like a slightly oversized tarte tatin pan) and sear the duck legs, skin-side down over medium heat until the skin turns golden and gives out some oil.
  • Turn the legs over, and take the pan off the heat while you cut the potatoes into 1-inch slices across, then cut each slice into 4. Arrange these potato pieces around the duck legs, then let a few sprigs of thyme fall over the duck and potatoes, and season with salt and pepper, before putting into the preheated oven.
  • Cook for two hours, occasionally turning the potatoes, for optimal outcome, which is tender duck legs and crispy potatoes, though both will be ready to eat after 1 1/2 hours.
  • Making leftovers right: If you have even a small amount of meat left, you could bag and mark it up and store it in the freezer for up to two months for future use. Thaw overnight in the refrigerator.

2 duck legs
2 baking potatoes or 1 pound other large white-skinned potatoes
Few sprigs of fresh thyme
Salt and pepper

PEKING DUCK

I have made this recipe and it is delicious. It can be served with plum sauce as well as a fruit sauce. This is actually a short-cut version but it is fantastic.

Steps:

  • Rinse the duck inside and out, and pat dry. Cut off tail and discard. In a small bowl, mix together the cinnamon, ginger, nutmeg, white pepper and cloves. Sprinkle one teaspoon of the mixture into the cavity of the duck. Stir one tablespoon of the soy sauce into the remaining spice mixture and rub evenly over the entire outside of the bird. Cut one of the green onions in half and tuck inside the cavity. Cover and refrigerate the bird for at least 2 hours, or overnight.
  • Place duck breast side up on a rack in a big enough wok or pot and steam for an hour adding a little more water, if necessary, as it evaporates. Lift duck with two large spoons, and drain juices and green onion.
  • Preheat the oven to 375 degrees F (190 degrees C). Place duck breast side up in a roasting pan and prick skin all over using a fork.
  • Roast for 30 minutes in the preheated oven. While the duck is roasting, mix together the remaining 2 tablespoons of soy sauce and honey. After 30 minutes, brush the honey mixture onto the duck and return it to the oven. Turn the heat up to 500 degrees F (260 degrees C). Roast for 5 minutes, or until the skin is richly browned. Do not allow the skin to char.
  • Prepare the duck sauce by mixing the plum jam with the sugar, vinegar and chutney in a small serving bowl. Chop remaining green onions and place them into a separate bowl. Place whole duck onto a serving platter and garnish with orange slices and fresh parsley. Use plum sauce and onions for dipping.

ROAST DUCK WITH ORANGE AND GINGER

For a festive occasion, a burnished whole duck makes quite an impression - fancier than chicken and more elegant than turkey. Roasting the duck is not so difficult to do, but it can be smoky; to be on the safe side, dismantle your smoke alarm and turn on a good exhaust fan. (If your oven has a convection fan, don't use it; that way you avoid unnecessarily sputtering fat blowing about.). Seasoning the duck ahead and leaving it in the fridge overnight helps to deepen the flavor and keeps work to a minimum the following day. This one is seasoned with orange zest, along with fair amount of ginger and five-spice powder, which gives it a marvelous perfume; serve it with mashed butternut squash.

Roast Duck with Orange and Ginger image

Steps:

  • Rinse duck and pat dry. Remove neck and giblets and save for another purpose. Remove excess fat from cavity and tail area and trim off a bit of flappy neck skin. Prick duck skin all over with tip of sharp paring knife, making sure not to penetrate meat.
  • Mix together salt and 5-spice powder. Season interior of duck with 1 tablespoon salt mixture; use remainder to generously season exterior (you may have a little left over). Combine orange zest with grated ginger and garlic, then smear mixture inside cavity. Place orange wedges in cavity. Tie legs together. Secure neck flap with wooden skewer or toothpicks. Place duck on rack in roasting pan breast-side-up and refrigerate overnight, uncovered.
  • Heat oven to 350 degrees. Meanwhile, bring duck to room temperature and make the glaze: Bring orange juice, honey, sugar and soy sauce to a simmer. Add sliced ginger and star anise, then reduce mixture until you have a medium-thick syrup, about 10 minutes. Remove from heat and set aside.
  • Roast duck for 2 hours, carefully pouring off fat and turning duck over every 30 minutes. Paint with glaze and roast another 30 minutes (2 1/2 hours in all). Tent with foil if glaze begins to get too dark. Duck is done when temperature at thickest part of leg reads 165 degrees. Paint duck once more, keep warm and let rest 20 minutes. Use poultry shears to cut into quarters (remove backbone first) or carve in the traditional way, removing legs from carcass and slicing breast. Serve with mashed butternut squash if desired.

1 5- to 6-pound Pekin (Long Island) duck
3 tablespoons kosher salt
1 tablespoon 5-spice powder, preferably homemade (see note)
1 large orange, zested and cut into 6 wedges
1 tablespoon grated ginger
1 tablespoon grated garlic
2 cups orange juice
1 tablespoons honey
2 tablespoons Demerara sugar
2 tablespoons soy sauce
1 2-inch piece of ginger, thickly sliced
3 star anise

CHINESE-STYLE DUCK CONFIT

The title really says it all - duck confit with a Chinese twist. From one of my favorite chefs, the late, but very great, Barbara Tropp, and her great cookbook, China Moon.

Steps:

  • Combine the peppercorns and salt in a heavy skillet and toast over moderate heat, stirring, until the salt turns off-white, about 5 minutes.
  • Adjust the heat so the peppercorns do not burn, but expect them to smoke.
  • Let the mixture cool slightly, then run through a spice grinder or food processor until you get a very fine powder.
  • Sieve to get rid of any husks from the peppercorns.
  • Set aside.
  • Sprinkle about 1/3 (about 1 tbl.) of the pepper-salt generously over the duck legs, massaging it well into the skin.
  • Save the rest of the pepper-salt for another use.
  • Put the legs in a zip-lock bag or a glass container covered tightly with plastic wrap and let marinate in the fridge overnight.
  • Let come to room temperature before cooking.
  • Heat a large heavy casserole over moderate heat until hot enough to evaporate a bead of water on contact.
  • Add 2 tbl.
  • of the duck fat and swirl to glaze the bottom of the pan.
  • Add the duck legs in a single layer and brown on both sides.
  • Adjust the heat so the skin browns without scorching and drizzle in a bit more fat if needed.
  • Remove the pot from the heat and carefully drain off any burned fat.
  • Return the pot and seared duck legs to moderate heat.
  • Add the duck fat and the confit seasonings.
  • Nudge the legs from the bottom while the mixture comes to a gentle simmer, then adjust the heat so that the fat does not boil.
  • Simmer uncovered until the duck is very tender at it's thickest part and almost falling off the bone, about 40 minutes.
  • Use tongs to carefully transfer the legs to a shallow container.
  • Let the fat cool until tepid, about 30 minutes, then carefully strain over the duck legs.
  • Discard the solids.
  • Arrange the legs so they are completely submerged in the fat, and place, uncovered, in the refrigerator.
  • Once the fat congeals, cover the container tightly.
  • In this state, the confit can be stored for 1 day to 2 weeks before using.
  • To serve, warm the container over low heat or in a slow oven until the fat turns liquid, then remove the legs.
  • Strip the legs of skin, then pull the meat from the bone in shreds.
  • Discard the skin, bones and any cartilage.
  • The meat is best when just taken from the bone, but you can store it in the refrigerator in shreds, just warm to room temperature before using.
  • You may have to adjust the seasonings with more pepper-salt.
  • The seasoned duck fat can be frozen indefinitely.
  • Strain through several layers of dry cheesecloth to trap excess pepper-salt, then seal and freeze for your next batch of confit.
  • On the second go-round you won't need to season the duck fat, but you will need to add 2 cups of fresh duck fat to the pot in order to cover the same amount of legs.

1 tablespoon szechwan pepper
2 tablespoons kosher salt
2 lbs fresh fat duck hindquarters (about 4)
6 -7 cups freshly rendered duck fat
1 head garlic, smashed
1/2 orange zest, of scrubbed and finely pared
1 1/2 star anise, broken into points
8 slices fresh ginger, smashed (quarter-sized coins)
1/4 teaspoon whole coriander seeds or 1/4 teaspoon fennel seed, crushed
4 scallions, cut into 1 inch nuggets and smashed

Steps:

  • Preheat oven to 400 degrees. Put duck legs skin side down in a skillet large enough to accommodate all ingredients comfortably. Turn heat to medium, and cook, rotating so skin browns thoroughly and evenly but do not turn over completely. Meanwhile, peel onion and carrots, trim celery and roughly chop them all.
  • When skins are nicely browned, turn and sear the meat side just 1 to 2 minutes, and season with salt and pepper. Remove to a plate; remove all fat from pan except enough to moisten vegetables. Add vegetables and salt and pepper, and cook, stirring occasionally, over medium-high heat, until they begin to brown, 10 to 15 minutes.
  • Return duck legs skin side up to pan, and add stock; it should come about halfway up the legs but not cover them. Turn heat to high, bring to boil and transfer to oven.
  • Cook 30 minutes, and turn heat to 350 degrees. Cook undisturbed until duck is tender and liquid reduced, at least 30 minutes or a bit longer. Serve immediately, or let rest in a 200-degree oven for up to an hour.

  • Rinse the duck inside and out and thoroughly pat dry. Remove the tail. Heat 1 tablespoon oil in a wok over medium heat, and swirl it around to coat the wok.
  • Lower the duck into the wok breast side down, and let the skin brown and crisp up slightly. Spoon the oil over the parts of the duck that aren’t touching the oil. You will end up with a lot more oil than you started with, as the fat renders out of the duck. Turn off the heat.
  • In a large pot (big enough to accommodate the duck laying flat) over medium heat, add a tablespoon of the fat from the wok, and cook the ginger and garlic for about 1 minute. Stir in the sugar until it’s melted.
  • Add the cooking wine, dark soy sauce, light soy sauce, rice vinegar, anise, cloves, bay leaves, peppercorns, dried orange peels, 3 cups water and the duck. The liquid should come up about halfway up the duck. Add a little more water as needed.

  • Refrigerate the duck overnight. Use a sausage pricker or a sharp paring knife to poke small holes all over the skin of the duck legs, being careful not to pierce the flesh. This will help the duck skin dry out in the cold air. Sprinkle Chinese five spice powder on all sides of the duck, then place on plate or tray and cover with plastic wrap. Refrigerate 8 hours or overnight.
  • Cook the duck legs. When ready, preheat an oven to 275 F. Place duck legs in a small baking dish (the smaller the better -- as they cook, the duck fat will render and melt; it helps for the duck legs to be sitting in the fat!). Cook for 1 ½ hours, basting with the rendered fat once or twice.
  • Crisp the skin. Raise the oven temperature to 400 F, then cook duck an additional 10-15 minutes, just to crisp the skin. Serve immediately with a pinch of flaky sea salt on each.

  • One day ahead: Rinse off the duck legs in cold water then drain them in a colander. Next, pour all but 2 cups of the water into a large plastic container (1 ½-2 gallon capacity). Heat the 2 cups of water in a medium bowl until it is nearly boiling and add the tea to it. Set the tea aside for about 10 minutes to steep. Meanwhile, dissolve the salt and the brown sugar in the remaining water. Add the soy sauce, garlic, ginger, star anise orange pieces and black pepper to the brine solution. Now add a few pieces of ice to the tea to cool it down. Add the cooled tea to the brine. Next, place all the duck legs into the brine, cover with lid to the container and refrigerate overnight.
  • Day of serving: About 3 hours before finished food is needed remove duck legs from the brine to a colander. Let them drain for about 20 minutes. Brush off any pieces of tea or ginger, etc. Pat the legs dry with paper towels.
  • Preheat your oven to 350°Cover a sheet pan with foil and place a large, flat roasting rack over the foil. Now arrange the legs on the rack so the ends of the drumsticks are to the center of the rack. Place the duck legs into the oven and slowly roast them for about 90 minutes. The legs are done when they are no longer “stiff”; they should move a little when the leg is pushed gently. The skin will be very crisp and have a pretty, deep brown color. Most of the fat will render off onto the sheet pan.
  • Sauté the mushrooms about 20 minutes before the duck is ready. Heat the vegetable oil in a large sauté pan over high heat. Add the mushrooms and sauté until they are nicely browned on all sides and their liquid has cooked away. Add the garlic and stir and fry for a minute, then add the soy sauce. Next, add the scallions, chili flakes, sesame oil and the cilantro.
