  • Bake in upper third of oven until cheese is melted and eggs are cooked as desired, 4 to 5 minutes for runny yolks.

Steps:

  • Pulse the bread in the bowl of a food processor until it becomes fine crumbs. Spray a nonstick skillet with cooking spray and heat pan over medium-high heat until hot. Lower heat to medium, add bread crumbs to the skillet and toast, tossing often, until crumbs are golden brown and toasted, about 5 to 6 minutes. Remove from heat and cool completely.
  • Grate egg in the medium-sized holes of a box grater or on a medium microplane grater (used for grating chocolate or cheese). Combine the egg, bread crumbs, parsley, cheese, salt, and pepper in a medium-sized bowl and toss to combine.
  • Steam the asparagus until firm, but tender, about 3 to 4 minutes.
  • Arrange asparagus on a serving platter and top with Parmesan-Egg Crumb Topping.

Steps:

  • Poach or steam the asparagus in or over boiling salted water until it is bright green and just tender, 3 to 7 minutes, depending upon thickness. Meanwhile, put 4 Tbs butter in a small saucepan and turn the heat to low.
  • Add at least 2 Tbs butter to a large skillet, preferably non-stick, and turn the heat to medium. When the butter melts, crack the eggs into the skillet and cook, sprinkling with salt and pepper and adjusting the heat as necessary, until the whites are no longer runny, about 5 minutes.
  • Drain the asparagus when it is done and divide among 4 plates. Turn off the heat under the butter the moment it begins to turn brown; if the eggs are not quite ready, keep it warm over the lowest possible heat.
  • Top the asparagus with a portion of ham if you're using it, then a fried egg, then a drizzle of the browned butter, and finally a few slices of Parmesan.
  • Serve immediately.

ASPARAGUS AND PARMESAN OMELET

Steps:

  • Steam the asparagus until tender, about 5 minutes. Refresh with cold water, and pat dry. Cut into 1/2-inch slices and set aside.
  • Break 2 eggs into a bowl and beat with a fork or a whisk until frothy. Add salt and pepper to taste (about 1/8 teaspoon salt) and 2 teaspoons milk. Whisk 2 teaspoons of the Parmesan and half the herbs into the eggs and mix well.
  • Heat an 8-inch nonstick omelet pan over medium-high heat. Add 2 teaspoons of the olive oil. When the oil feels hot when you hold your hand above it, pour in the eggs, scraping every last bit into the pan. Swirl the pan to distribute the eggs evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking. As soon as the eggs are set on the bottom, sprinkle half the asparagus down the middle of the eggs, then jerk the pan quickly away from you then back towards you so that the omelet folds over on itself. If you don't like your omelet runny in the middle (I do), jerk the pan again so that the omelet folds over once more. Cook for a minute or two longer. Tilt the pan and roll out onto a plate. Repeat with the remaining eggs, Parmesan herbs, and asparagus, and serve.

  • Bring a small pot of water to a hard boil Add a dash of salt and then add the chopped asparagus. Stir. When the water returns to a boil, remove from heat. Drain the asparagus and transfer to a large bowl of cold water. (This will stop the cooking process and save your asparagus from wilting.)
  • Drain the cold water well from the asparagus. Distribute the asparagus among the three prepared baking dishes. Top the center of each baking dish with a teaspoon of butter.
