CHOW MEIN
This recipe is from my husbands side of the family. They don't use measurements or amounts when they cook, so I will do my best to give approximates. You can adjust accordingly. This is a good, easy, fast recipe that is great for a weekday meal. We serve it over rice and chinese noodles. Yum!

Steps:
- Season pork pieces with salt and pepper. Brown pork over medium high heat. Once browned, add enough water to cover the pork. Bring to boil.
- Add onion, celery, green pepper, mushroons and water chestnuts. Cook until the veggies are tender.
- At this point you may need to add more water depending on the amount of sauce you desire.
- Add chicken bullion and soy sauce ( to taste).
- Mix the cornstarch with a bit of water and add to pan. Sauce will thicken. (adjust amount of cornstach based on how thick you want the sauce).
- Adjust seasoning, serve over rice and/or chinese noodles.

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by my Aunt Jane.

Steps:
- Peel eggplants and cut into 1/2 inch strips.
- Heat oil in deep fat fryer to 375 degrees.
- Dip eggplant strips into milk, then flour. Then dip into milk again and finally into bread crumbs.
- Fry about 12 at a time for 4 minutes. Drain on paper towels.
- Serve sprinkled with powdered sugar.

AUNT JANE'S CARAMEL CORN
This caramel corn is so buttery and delicious. We made it at Christmas when friends were visiting and they ate half of it before it was even baked! My Aunt Jane gave it to me about 30 years ago.

Steps:
- Preheat oven to 250 degrees.
- Butter the sides and bottom of a large roaster.
- Pop popcorn (air popper works best) and place in buttered roaster.
- Melt butter (do not use margarine) in a large sauce pan. Add white corn syrup, brown sugar, and salt. Bring to a boil. Boil for 5 minutes.
- Remove from heat and add vanilla and baking soda. The soda will make the syrup foamy and thick.
- Pour over popcorn in batches, mixing thoroughly with wooden spoons between batches.
- Bake in pre-heated oven for 30 minutes stirring every 10 minutes. Pour baked corn onto baking sheets and separate. Store in plastic bags.
