AVOCADO AND COCONUT WATER SMOOTHIES
Blend avocadoes, coconut water, agave nectar and lime juice for a refreshing smoothie.

Steps:
- Fill 14-cube ice-cube tray with 2 cups of the cold coconut water. Freeze until solid.
- In blender, place avocado, coconut water ice cubes, remaining 1/4 cup cold coconut water, agave nectar and lime juice. Cover; blend with on-and-off pulses until creamy and smooth.
- Pour into drinking glasses. Serve immediately.

This delicious and creamy avocado smoothie makes such a fantastic breakfast or snack. It's high in fibre, vitamin K, potassium and folate - and has only 166 calories per glass. We've used coconut cream in this recipe, which is the cream from a can of full fat coconut milk that's been left refrigerated. If you find this recipe too creamy for you, you can also add some of the liquid from the can too.

The mixture will be quite thick; add cold water a few tablespoons at a time, blending after each addition, until the mixture is pourable. Taste and add more sweetened condensed milk if you want it sweeter. Serve in chilled glasses with straws.

COCONUT-AVOCADO ICE CREAM
My mum loves avocados and coconut milk. Since we have an avocado tree and coconut cream on hand, I tried making this fusion ice cream and it's heavenly. The avocado lends a lovely, appetizing color, and it has the nice aroma of coconut. Simply irresistible. Definitely something different to impress your guests.
