BACON-WRAPPED ONION RINGS
Steps:
- Preheat the oven to 375 degrees F.
- Wrap 2 slices of bacon through the middle of each onion ring and fully around to cover, leaving the center of the ring open. Transfer to a baking rack on a baking sheet. Bake until the bacon is fully cooked, about 25 minutes.

- Peel and wash the onions. With the point of a small, sharp knife, cut a 1-inch core from the top of each onion and make shallow slits in a circle around the top. Wrap 2 slices of bacon horizontally around each onion, and secure them with toothpicks. Then put 1 teaspoon of butter in each core. Season with salt and pepper.
- Place each onion on a square of aluminum foil and bring the edges together at the top, leaving a small opening for steam to escape. Put the foil-wrapped onions on the grill and cook for 1 hour, or until the onions are tender when pierced with the tip of a knife. You can also bake in the oven at 350 degrees F for 1 hour. Cool the onions for a few minutes then unwrap and cut into quarters to serve.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Spread 1/2 teaspoon butter over the cut-side of each cabbage wedge.
- Mix Parmesan cheese, salt, garlic powder, and black pepper together in a bowl; sprinkle over the buttered sides of the cabbage wedges. Wrap a slice of bacon around each wedge and wrap wedges individually in heavy aluminum foil.
- Grill cabbage until tender in the middle and the bacon is crisp, turning once, about 40 minutes.

BACON-WRAPPED BAKED ONIONS
This may take a little time to make but well worth the little extra effort, very impressive to serve to your dinner guests, this is one of the best recipes for baked onions you will ever have! The onions may be boiled and the insides removed ahead of time and refrigerated to finish filling and baked later. The original recipe called for only for 4 onions, but I increased and "tweaked" the recipe slightly.

- Cook the onions in boiling water until tender, but not falling apart (about 25 minutes).
- Remove from pot with a slotted spoon and cool.
- When cool enough to handle, cut off about an inch off of top of onions with a very sharp knife, and finely chop the tops.
- Trim the root end of the onions slightly, just enough so they can stand straight.
- Scoop out about a heaping tablespoon from the center of each onion (make certain to keep the inside intact) and finely chop the center, adding to the rest of the chopped onions.
- Transfer the hollowed onions to an oiled baking dish (I use an 11x7-inch for 8 onions, if you are only making 4 onions, then use an 8x8-inch).
- Set oven to 375 degrees.
- In a skillet over medium heat, saute the chopped onions for about 3 minutes in oil.
- Stir in whipping cream and remove from heat.
- Stir in the Parmesan cheese, salt and pepper.
- Fill the whole onions with some of the sauted onion and Parmesan mixture, then spoon the remainder of the mixture around the onions in the baking dish.
- Wrap a piece of pancetta or a bacon slice around the middle of each onion and secure with a toothpick.
- Bake the onions for about 40-50 minutes (depending on the size of your onions).

- Spray each sheet of foil with cooking spray. Top each piece with equal portions of potatoes, bacon, onion soup mix, onion, and cheese and mix. Add salt and pepper to taste. Add 1 tablespoon of butter to each serving. Wrap securely.
- Grill for 20 to 30 minutes. Or you can bake it in the oven, at 350° for about 35 minutes or till done. Let stand 10 minutes before serving. Serve in foil, topped with sour cream if desired.

- Peel the onions. Then clean up the root ends, leaving them intact. Slice off a thin piece of the top ends and then, with a paring knife, core out a bit from each of the tops. Wrap two slices of bacon around each onion's middle, securing the bacon with 2 to 3 toothpicks. Then add a teaspoon of butter, one freshly minced garlic clove, and 1/4 teaspoon of the beef bouillon in each core. Season with salt and pepper.
- Place each onion on a square of heavy duty aluminum foil and bring the edges together at the top, taking care to not let the toothpicks poke through the foil. Leave a small opening at the top of the foil packet for steam to escape. Place packets on a pan with sides and bake for at least one hour, until onion is tender when pierced with the tip of a knife, and the juices accumulated in the packets are bubbling a bit. The onions should be very fragrant and the garlic should be softened.
- If you are using huge Vidalias, it may require baking for up to 30 to 45 minutes longer to achieve absolute tenderness.
