BAKED HAM WITH BROWN SUGAR-HONEY GLAZE

- Adjust the oven racks to accommodate a large roasting pan. Fit the pan with a shallow roasting rack. Preheat the oven to 350 degrees F.
- Unwrap the ham and rinse it under cold water. Place it on the rack in the roasting pan. Cover with foil and bake 1 hour 40 minutes. Meanwhile, combine the brown sugar and honey in a saucepan and cook over medium heat until the mixture is smooth and the sugar has dissolved.
- Pour the brown sugar glaze over the ham and continue roasting1 hour 40 minutes more, basting at least twice with the drippings in the roaster. (To adjust the total roasting time for a smaller or larger ham, calculate 20 minutes per pound.) Check for doneness by inserting a meat thermometer into a meaty spot (not into fat or touching the bone)-it should register 160 degrees F.
- Let the ham stand 15 minutes before slicing to allow the juices to set. (You can make the ham up to 2 hours ahead; tent with foil and serve at room temperature.)
PINEAPPLE HONEY-GLAZED HAM
Ham dressed in pineapple rings and maraschino cherries is a holiday classic, burnished with a glossy glaze made with pineapple juice, honey and brown sugar. If you like sweet and salty, you'll love this show-stopping centerpiece!

- Let the ham sit at room temperature for about 30 minutes.
- Preheat the oven to 325 degrees F.
- Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
- Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
- Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
- Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
- Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
- Increase the oven temperature to 425 degrees F.
- Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Place ham in a large baking dish.
- Bake in the preheated oven for 45 minutes. Whisk brown sugar, ginger ale, mustard, and cinnamon together in a bowl; brush over ham. Continue baking ham until the meat pulls away easily from the bone, about 45 more minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

You'll never have another salty, dry ham again! I use this recipe every Christmas and Easter and get a pretty, moist, and succulent ham every time.

- Preheat the oven to 250 or if pressed for time 300.
- Remove the rind from the ham and most of the fat if there in a lot. I always score the ham - cut it diagonally so you get the pretty diamonds. Put a clove in the center of each diamond. Place ham in a baking pan lined with aluminum foil - eliminates that nasty clean up later.
- In a small bowl, combine mustard, brown sugar and honey. Pour glaze over the ham and press into the cuts. Using toothpicks, secure slices of pineapple to the ham with a cherry in the middle of each ring.
- Bake the ham from 4 hours to all day. Baste every 30 minute with equal parts wine and ginger ale, or ginger ale only. Later in the cooking process use the pan juices for basting.
- Remove from the oven and let ham stand for 30 minutes before carving. Enjoy!

- Break the celery into half or less so it fits in the pan. Squeeze the orange and lemon juice into the pan and add the rest of the orange outer. Cut the other vegetables into quarters and add them to the pan. (No need to peel the ginger, just chop into 4 and add it to the pan.)
- Put all the ingredients into the pan. If you have ham with skin on, leave it on and place the whole joint in the pan.
