BAKED MACARONI AND CHEESE CASSEROLE FROM 1941

I love experimenting with vintage recipes and this one from my 1941 cook book did not disappoint. It was easy to make and it was beyond good! I hope you'll try this recipe.

Baked Macaroni and Cheese Casserole from 1941 image

Steps:

  • 1. Preheat oven to 375 degrees. Spray a 2.75 quart pyrex baking dish with cooking spray or grease lightly with butter. Set aside
  • 2. Cook 1 cup macaroni according to package directions and drain well. Set aside.
  • 3. In a heavy saucepan, melt butter being very careful not to scorch. Add flour and stir well. Slowly pour in milk, salt and pepper and cook over medium heat, stirring constantly until thickened. Remove from heat an add cheese, stirring until cheese is melted.
  • 4. Add cooked macaroni and fold into cheese sauce. Pour mixture into prepared baking dish. Combine crushed crackers and butter and sprinkle over the top.
  • 5. Bake uncovered for 25 to 30 minutes or until bubbly and crumbs are golden.

1 c elbow macaroni cooked according to package directions
1 1/2 c white sauce (recipe to follow)
1 c shredded sharp cheddar cheese
buttered crumbs
WHITE SAUCE
3 Tbsp butter
3 Tbsp all purpose flour
1 1/2 c whole milk
salt and pepper to taste (i also used about 1/4 tsp paprika for color)
BUTTERED CRUMBS
1 sleeve round buttery crackers, crushed (i.e. town house)
3 Tbsp melted butter

CLASSIC BAKED MACARONI AND CHEESE

Think Stouffer's without the freezer. While it can be enjoyed straight from the pot, this macaroni and cheese has a slightly looser sauce than the stovetop variety to allow for thickening in the oven. Bread crumbs, while optional, make it truly spectacular.

Classic Baked Macaroni and Cheese image

Steps:

  • Cook pasta in a large pot of salted boiling water until it's barely al dente. (It should be more al dente than your average pasta: It's going to continue to cook in the oven.) Drain and set aside.
  • Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping. Add garlic, paprika and season with salt and pepper. Bring to a simmer, whisking constantly and paying special attention to the edges of the pot to make sure the flour mixture is totally incorporated.
  • Add grated cheese and whisk to blend until the cheese is completely melted. (The sauce will seem thick at first and thin out as the cheese melts; it will thicken while it bakes.) Season with salt and pepper and add cooked pasta, stirring to coat well.
  • Heat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil (to catch any cheesy drips).
  • Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.
  • Transfer the macaroni and cheese mixture to a 3-quart or 9 x 13 baking dish and scatter bread crumbs, if using, evenly over the top. Place on prepared baking sheet and bake until macaroni and cheese is bubbling, thickened and creamy, and bread crumbs are evenly golden brown, 25 to 30 minutes. Let cool slightly before serving.

Baked Macaroni and Cheese image

Steps:

  • Preheat oven to 350 degrees F.
  • In a large pot of boiling, salted water cook the pasta to al dente.
  • While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
  • Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
  • Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
  • Remember to save leftovers for fried Macaroni and Cheese.

Steps:

  • Cook macaroni in boiling water until almost tender; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, salt, mustard, pepper and pepper sauce until smooth. TASTY BAKED MAC N CHEESE

I love this recipe because it's taken me so long to actually get a good tasting noodle and not just a good tasting piece of cheese on top. This recipe was just trial and error and it's really really good in my opinion. I'm really looking for feedback on this recipe. Thanks so much! This is really good even days after for leftovers. Tasty Baked Mac n Cheese image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a 9x13-inch baking dish with parchment paper.
  • Bring a large pot of water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until almost cooked through and firm to the bite, about 7 minutes. Drain and transfer to a large bowl. Sprinkle macaroni with 1/2 teaspoon salt and stir 1/2 cup butter into the pasta.
  • Mix 1/4 cup butter, sour cream, cream cheese, sharp Cheddar cheese, and egg yolk together in a bowl. Stir flour, 1/2 teaspoon salt, cayenne pepper, and milk into the sour cream mixture.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.
