- Preheat oven to 350 degrees F (175 degrees C). Grease an 9x5 inch loaf pan.
- In a large bowl, stir together the mashed banana, eggs, oil, pumpkin, honey and sugar. Combine the flour, baking powder, baking soda, salt, pie spice and cinnamon, stir into the banana mixture until just combined. Fold in the raisins and walnuts if desired. Pour batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before moving to a wire rack to cool completely.

- You will be cooking this on Power Level 8 in a metal bread baking pan and this assumes you have the extender ring for the nuwave oven. 1. Mix the canola oil, two eggs, the sugar and whole milk in large bowl. 2.Now Beat the ingredients until thoroughly mixed. 3. Now add the Salt, Flour, Cinnamon, Sugar, Baking Powder and Baking Soda to the mixture. It helps if you add them a little at a time 4. Blend the combined mixture together with a large spoon or mixer set on low.. 5. Add bananas to the combined batter and continue to mix. 6. Pour batter evenly into the baking pan with divider in place. 8. Now put the baking pan on the 1 inch Nuwave Oven rack. 9. Place Extender Ring on NuWave oven base. 10. Bake the Banana bread in the Nuwave oven on Power level 8. Bake for 30 minutes. To make sure its done stick a toothe pick in the bread and pull it out. If the bread is done the toothpick will come out clean. 11. Remove the baking pan from the nuwave oven with an oven mitt as it will be HOT. 12. Let the Banana bread cool in pan for 10 minutes. 13. Using oven gloves or a towel to hold the still quite warm pan, Remove the bread from the pan and place on the wire rack to cool another 10 minutes. Serve and enjoy!

- fill loaf pans 2/3 full. (we used miniature pans).
- bake on full power 12 minutes uncovered.
- the crust will form on top but it will not be done in the middle.
- put a little butter over the top.
- cover with tin foil allowing room for the bread to rise.
- bake another 12 minutes on full power. done.
- The bread rises up in the middle.

- Preheat an oven to 350 degrees F. Line two 9 by 5-inch loaf pans with parchment paper, leaving a 2-inch overhang on the longer sides, then spray with nonstick cooking spray.
- Whisk together the flour, baking soda, pumpkin pie spice, baking powder and salt in a medium bowl until combined. Mash the bananas in a large bowl with a potato masher or fork until smooth, then whisk in the eggs, sugar, pumpkin puree, oil, sour cream and vanilla until smooth and combined. Add the flour mixture to the banana mixture, then stir the batter together with a rubber spatula until just combined (it's ok if there are a couple small lumps).
- Divide the batter evenly between the two prepared loaf pans, smoothing out the top with a spatula. Top each loaf with 3 tablespoons of pepitas. Bake in the center of the oven until a toothpick inserted in the center of each loaf comes out clean and each loaf reaches an internal temperature of 200 to 205 degrees F, 60 to 75 minutes.
- Let cool in the pans for 15 minutes, then use the parchment paper overhang to remove each loaf from the pan. Let cool completely on a wire rack, about 1 1/2 hours.

- Preheat the oven to 350 degrees F. If using nuts for the mix-ins, spread them onto a single layer on an ungreased baking sheet. Bake until toasted and fragrant, about 8 to 12 minutes depending upon the size of the nuts. Do not walk away during the last few minutes of baking (this is when nuts love to burn). Immediately transfer to a cutting board. Let cool a few minutes, then roughly chop. Lightly coat an 8 1/2 x 4 1/2-inch loaf pan with nonstick spray.
- In a small bowl, mash the bananas measure them out to ensure that you have 1 cup. In the bowl of a standing mixer fitted with the paddle attachment or a mixing bowl, beat together the butter and coconut sugar until smooth and combined. Beat in the measured banana, Greek yogurt, honey, eggs, pumpkin (feel free to reuse the measuring cup you used for the banana to measure the pumpkin), and vanilla. Place the pan on a wire rack and let cool completely, then remove the bread from the pan wrap the loaf tightly in plastic. Refrigerate for at least 1 hour, or even better, overnight (I know this step sounds odd but it works and makes the bread taste incredible). Slice and devour!
