Basil Salmon image

Steps:

  • For pesto, combine the basil, oil, garlic, pepper, lemon juice, salt and 1 tablespoon Parmesan cheese in a food processor; cover and process until finely chopped. , Place the salmon in a greased 13-in. x 9-in. baking dish. Spread 2 tablespoons pesto over fillets. (Cover and refrigerate remaining pesto for another use.) , Bake, uncovered, at 400° for 20-22 minutes or until fish flakes easily with a fork. Sprinkle with remaining cheese. Bake 2-3 minutes longer or until cheese is melted.

EASY BAKED CAESAR SALMON

Bread these fillets in the morning, refrigerate and pop them in the oven after work; serve with some rice/pasta and a veggie and you will have dinner on the table in half an hour! An easy weeknight seafood dinner for the busy cook....a salmon fillet baked in an herbed caesar style breading. I'm always looking for different ways to prepare salmon and this is one of our favorites. This recipe is courtesy of Taste of Home magazine.

Easy Baked Caesar Salmon image

Steps:

  • Preheat oven at 350 degrees.
  • Place the salmon in a greased 13x9 baking dish and spoon the creamy caesar dressing over the fillets and sprinkle with pepper.
  • Combine the crushed croutons, cheese and basil in a ziplock baggie, shake until mixed well and sprinkle this mixture over the fillets, pressing gently into the dressing/fillets.
  • Drizzle with oil and bake ucovered for 20 minutes or until fish flakes easily with a fork.

4 (8 ounce) salmon fillets
1/4 cup creamy caesar salad dressing
1 cup caesar-flavor croutons, crushed
1/2 cup grated parmesan cheese
2 teaspoons dried basil
2 tablespoons olive oil

  • Preheat oven to 375°. Place salmon in a greased 15x10x1-in. baking pan. Drizzle with oil; sprinkle with lemon zest, salt, pepper and 2 tablespoons basil; top with lemon slices., Bake 15-20 minutes or until fish just begins to flake easily with a fork. If desired, top with additional basil.

Steps:

  • Place salmon in a large resealable plastic bag; add salad dressing. Seal bag and turn to coat; refrigerate for at least 2 hours., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill rack. Grill salmon, covered, over medium heat or broil 4 in. from the heat for 5 minutes. , Combine soy sauce and garlic; spoon over salmon. Grill 10-15 minutes longer or until fish flakes easily with a fork, basting occasionally with remaining soy sauce mixture.

  • Prepare campfire or grill for medium heat. Place each fillet, skin side down, on a piece of heavy-duty foil (about 12 in. square). Mix melted butter, basil, lemon juice, salt and pepper; spoon over salmon. Fold foil around fish, sealing tightly., Cook on campfire or in covered grill until fish just begins to flake easily with a fork, 10-15 minutes. Open foil carefully to allow steam to escape.   • Prepare the Salmon: Place another sheet of aluminum foil large enough to fold over and seal salmon on top of lined baking sheet. Arrange the salmon (skin side down) in the middle of the of the foil. Using a brush or spoon, brush the salmon with the basil butter. Season the salmon generously with salt and pepper. Fold and wrap the the foil so that all sides are properly sealed and the sauce doesn't leak. Scatter the tomatoes around the packet of salmon.
