Because I have a busy schedule, I like to keep a batch of these tender chicken rolls in the freezer. Coated with golden crumbs, they seem fancy enough for company. - Preheat oven to 425°. Flatten chicken to 1/4-in. thickness. Place a slice of ham and half slice of provolone cheese on each piece of chicken. Roll up from a short side and tuck in ends; secure with a toothpick. , In a shallow bowl, combine crumbs, Romano cheese and parsley. Pour milk into another bowl. Dip chicken rolls in milk, then roll in crumb mixture. , Place roll-ups, seam side down, on a greased baking sheet. Spritz chicken with cooking spray. Bake, uncovered, 25 minutes or until meat is no longer pink. Remove toothpicks. Freeze option: Wrap unbaked chicken roll-ups individually in plastic wrap; place in a large resealable freezer bag. Freeze up to 2 months. To use, completely thaw in the refrigerator. Preheat oven to 425°. Unwrap roll-ups and place on a greased baking sheet. Spritz with nonstick cooking spray. BBQ CHICKEN ROLL-UPS
This was a "throw together" recipe that turned out to be a winner. It came when I had a hankering for BBQ chicken pizza but was too lazy to make (or buy) the crust. The roll-ups are baked to cut down on the fat, and they got just as crispy as when I've fried them. Enjoy!

Steps:
- Marinate chicken in the 1/3 cup of BBQ sauce for 1 to 2.
- hours in the refrigerator.
- Remove chicken from marinade and discard marinade.
- Cut chicken into bite-sized pieces.
- Spray 10 inch skillet with Pam.
- Sauté chicken over med-high heat, until it is opaque, 3- 4 minutes.
- During the last 2 minutes of cooking, add the onion and peppers.
- Cook until barely soft.
- Lay out the egg roll wrappers.
- In the center of each, place.
- 2 tablespoons.
- chicken and veggie mixture, a drizzle of the extra BBQ sauce, and a sprinkling of the cheeses.
- Roll up, and place on a baking sheet, seam side down.
- Repeat until all of the filling is used up.
- Spray Roll-ups with Pam and bake at 400 degrees F for 16 minutes, turning once halfway through cooking.
- Serve with ranch dressing for dipping and a big salad for a simple meal.

- Preheat oven to 475 degrees F (245 degrees C). Grease a baking dish. In a bowl, mix together the mayonnaise, Dijon mustard, lemon juice, lemon zest, tarragon, salt, and pepper until the mixture is well combined. Set aside.
- Cook asparagus in the microwave on High until bright green and just tender, 1 to 1 1/2 minutes. Set the asparagus spears aside. Place a chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken breast with the smooth side of a meat mallet to a thickness of about 1/4 inch. Repeat with the rest of the chicken breasts.
- Place 1 slice of provolone on each chicken breast, and top the cheese with 4 asparagus spears per breast. Roll the chicken breasts around the asparagus and cheese, making a tidy package, and place, seam sides down, in the prepared baking dish. With a pastry brush, apply a coating of the mayonnaise mixture to each chicken breast, and sprinkle each with panko crumbs, pressing the crumbs into the chicken to make a coating.
- Bake in the preheated oven until the crumbs are browned and the chicken juices run clear, about 25 minutes.

- Preheat oven to 375°F degrees.
- Bring large pot of water to boil.
- Turn off heat and add lasagna noodles.
- Let sit 5 minutes.
- Remove lasagna noodles to platter to cool.
- To prepare roll-ups, place lasagna noodles on flat surface.
- Divide chicken and bell pepper strips among lasagna noodles.
- Sprinkle each lasagna noodle with about 1 tablespoon cheese and roll up, being careful to keep ingredients wrapped inside.
- Spray 9X 13-inch baking dish with cooking spray.
- Spoon 1V2 cups barbecue sauce into baking dish and spread evenly to cover bottom.
- Place roll-ups into dish.
