Roast Essentials: Bottom Round on the Stovetop image

Steps:

  • 1. PREP/PREPARE
  • 2. Chef's Note: This dish differs from other "traditional" pot roasts in the fact that there are no veggies added to the sauce. Although I love the idea of throwing everything into a single pot, and letting it cook away, sometimes I like my side dishes to be different than just veggies in sauce. For this recipe I threw some russet and sweet potatoes into the oven, and then made some honey-glazed carrots.
  • 3. Gather your Ingredients (mise en place).
  • 4. Season the roast with a generous amount of salt, and pepper.
  • 5. Add the grapeseed oil to a heavy-bottomed pot, over medium high heat.
  • 6. Sear the roast on all sides, about 2 minutes per side.
  • 7. Add the mushrooms, and 2 or 3 tablespoons of the chicken stock to the pot.
  • 8. Cook the mushrooms, stirring constantly, until the liquid evaporates, about 2 - 3 minutes.
  • 9. Return the roast, to the pot, and then add the chicken stock and apple cider vinegar.
  • 10. Chef's Note: Why chicken stock? I tried this recipe with beef stock and with chicken stock... I prefer chicken stock because it gives this dish a lighter taste. If I were doing this dish in the Autumn, I would probably use beef stock. In addition, the sautéing of the mushrooms in a bit of the stock gives the sauce an excellent flavor depth.
  • 11. Bring up to a boil, and then down to a light simmer.
  • 12. Cover, and allow to simmer, for 2 to 3 hours, or until fork tender.
  • 13. Remove the roast, cover, and reserve.
  • 14. Whisk the flour and water together in a small bowl.
  • 15. Add the flour/water mixture (slurry) to the simmering sauce, and whisk until the liquid thickens, about 3 - 4 minutes.
  • 16. Add the honey, and whisk to combine.
  • 17. Chef's Tip: The honey is going to balance the tartness of the cider vinegar with the savory taste of the mushrooms and stock. My suggestion would be to add half the honey, taste the sauce, and then continue to add more honey, until you've achieved the desired results.
  • 18. PLATE/PRESENT
  • 19. You have several choices on serving: 1. You could slice the beef (against the grain), return it to the mushroom sauce, and serve directly from the pot. 2. You could slice and serve the beef separately, and then allow your guests to drizzle on the sauce at the table. Enjoy

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Trim excess fat from roast, leaving about 1/4 inch fat. Liberally season all sides with salt, pepper, and garlic powder. Place roast, fat-side up, in a Dutch oven. Place onions on and around the roast.
  • Cover and bake until aromatic, about 1 1/2 hours. Reduce heat to 350 degrees F (175 degrees C) and continue to bake, turning the meat every 30 minutes and keeping covered, until roast is browned and cooked through, about 3 hours more. An instant-read thermometer inserted in the thickest part of the roast should read 145 degrees F (65 degrees C).
  • Check tenderness of roast with a fork; if not tender enough, add additional cook time in 30-minute increments until meat easily falls apart.
  • Remove from the oven and transfer roast to a cutting board. Tent with foil and let rest for at least 20 minutes.
  • Meanwhile, whisk water and flour together in a small bowl.
  • Place the Dutch oven, uncovered, on the stovetop over medium heat. Smash the remaining onion pieces and stir, being careful not to let the gravy burn. Slowly add water-flour mixture, whisking until cooked through and desired thickness is achieved.
  • Slice roast and serve alongside gravy.

Roast Beef with Shallots image

Steps:

  • Season beef with 2 tablespoons salt and 1 teaspoon pepper. Wrap with plastic and refrigerate at least 8 hours and up to 1 day. Unwrap and let stand at room temperature 1 hour.
  • Preheat oven to 350 degrees. Heat a large skillet (preferably cast iron) over medium-high. Add 2 tablespoons oil and brown beef all over, 12 to 14 minutes. Transfer to a plate; carefully pour oil from skillet and discard.
  • Place shallots in a single layer in bottom of skillet; drizzle with 1 tablespoon oil. Stir together garlic, mustard, and 2 tablespoons oil; rub mixture all over beef. Lay 1 handful of herbs down center of skillet. Place beef on top, fat-side up. Transfer to oven and roast 45 minutes.
  • Place remaining handful of herbs on top of beef; drizzle herbs with remaining 1 tablespoon oil. Return to oven and roast until a thermometer inserted in thickest part of roast reaches 105 degrees for rare, 10 to 20 minutes. Transfer roast to a cutting board and shallots to a serving platter, loosely tent both with foil, and let stand at least 30 minutes.
  • Return skillet to medium-high heat. Stir in vermouth; bring to a boil and cook, stirring occasionally, until just a few tablespoons remain, 5 to 7 minutes. Strain through a fine-mesh sieve and let cool 10 minutes.
  • Whip heavy cream to stiff peaks. Fold in sour cream, cayenne pepper, horseradish, and vermouth mixture. Season with salt. Store horseradish cream in refrigerator until ready to serve, or up to 3 days.
  • Remove twine from roast; thinly slice across the grain and serve, with horseradish cream, shallots, and mostarda.

  • In a Dutch oven, brown roast on all sides in oil over medium-high heat; drain. SLOW-ROASTED BEEF

With the aid of a digital thermometer and plenty of hands-off time, this recipe makes the best of an inexpensive beef roast, which really shines when thinly sliced and reused in flavor-packed dishes over the next week. Slow-Roasted Beef image

Steps:

  • Pat roast dry with paper towels. Rub generously with salt (at least 1/4 cup) and pepper on all sides. Shake the roast gently, allowing any excess salt and pepper to fall off.
  • Place a wire rack in a small rimmed baking sheet or lay 5 to 6 metal skewers across a large plate or baking sheet. Place roast on top of rack or skewers, making sure it is fully elevated above the bottom of the baking sheet. Place elevated roast on the bottom rack of your refrigerator, uncovered (or loosely covered with foil, if you are squeamish about raw meat), and let rest undisturbed for at least 24 hours and up to 48 hours.
  • Transfer baking sheet with elevated roast directly from the refrigerator into a cold oven and set oven temperature to 225 degrees. Cook until the center of the roast reaches 120 degrees for rare, or 130 degrees for medium, as tested with a digital thermometer. Depending on the oven and the exact geometry of the roast, this will take 1 to 2 1/2 hours.
  • Remove baking sheet with roast from oven and set on a trivet or on top of your stovetop. Let the roast rest on the baking sheet for at least 30 minutes.
  • Heat vegetable oil in a large skillet (any heavy skillet without a nonstick coating will do) over high until lightly smoking. Sear roast, turning occasionally, until well browned on all sides, about 4 minutes total.
  • Carve into thin slices with a sharp knife and serve what you'll eat today. When finished, carve remaining roast. Carefully lay fanned slices into zipper-lock freezer bags in layers no thicker than 1/2 inch. Squeeze out as much air as possible and stack sealed bags on an aluminum baking sheet. Place in freezer until completely frozen. Store frozen for up to 2 months.
  • To thaw, place one bag of frozen sliced steak on an aluminum baking sheet at room temperature until defrosted, about 45 minutes. It is important to use an aluminum sheet, as the high thermal conductivity of aluminum greatly speeds up the thawing process. Use thawed sliced steak as desired.
