- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, brown sugar, mustard and Worcestershire sauce. Remove from the heat; set aside., Press each biscuit onto the bottom and up the sides of a greased muffin cup. Spoon beef mixture into cups; top with cheese cubes. Bake at 400° for 14-16 minutes or until golden brown. Freeze option: Freeze cooled pastries in a freezer container, separating layers with waxed paper. To use, thaw pastries in the refrigerator for 8 hours. Reheat on a baking sheet in a preheated 375° oven until heated through.

BEEF IN A CUP
A tasty lunch time treat. Great for lunchboxes. I usually double the recipe, as they can be easily reheated in the microwave.

Steps:
- Preheat oven to 375.
- Brown beef, drain off fat.
- Return beef to skillet add ketchup, brown sugar, vinegar, chili powder, onion salt, garlic powder and pepper.
- Let simmer 5 minutes.
- Spray muffin tins with Pam*.
- Press biscuits in tin, pressing to cover bottom and sides.
- Spoon about 1/4 cup (approximately) of meat mixture into each biscuit lined cup.
- Top with cheese.
- Bake for 18-20 minutes or until golden brown.

CORNED-BEEF EGG CUPS
Sitting down to a hearty Irish-inspired breakfast on St. Patrick's Day doesn't mean having to wake up at the crack of dawn. These no-fuss egg cups require just five ingredients and 20 minutes of bake time, so you can rise and dine in no time.

- Preheat oven to 375°F. Brush 6 muffin cups (the deeper the better) with melted butter. With a rolling pin, slightly flatten slices of potato bread (trimming off the crusts if desired). Press into prepared cups and brush with more butter.
- Melt 1 tablespoon butter in a small skillet over medium heat. Add shallot and cook, stirring, until softened, 2 to 3 minutes. Remove from heat and stir in corned beef and baby spinach.
- Divide filling evenly among cups. Crack 1 large egg into each and season with salt and pepper. Bake until egg whites are almost set, 15 to 20 minutes. Let stand 5 minutes before serving.
SPICY BEEF IN LETTUCE CUPS
Just about any large leaf lettuce can be used to create cups or folded packets for this spicy Szechuan-style dish of ground beef. The filling is also good on flour tortillas or pita pockets with shredded lettuce. It makes a great warm weather light dinner, perfect for sharing with friends! This recipe was printed in the food section of the December 17, 2008 Houston Chronicle and was adapted from "Quick and Easy Chinese".

Steps:
- In a small bowl,combine soy sauce,sherry,cornstarch, sugar and salt; stir well and set aside.
- In a medium bowl, use a spoon to break up the ground beef; gently mix in soy-sauce mixture. Set aside 10 to 15 minutes.
- Heat wok or large, deep skillet over medium-high heat until very hot.
- Add oil and swirl to coat pan; add ginger and garlic.
- Cook for about 1 minute, stirring, until fragrant but not browned.
- Crumble in beef, and use spatula or large slotted spoon to break it up and spread meat over pan to help it cook evenly.
- Cook until it changes color on one side, 1 to 2 minutes.
- Turn meat and cook another minute undisturbed.
- Toss well, using a spatula to break up any large chunks.
- When meat is cooked, add pepper flakes and scallions, then toss well.
- Add sesame oil and remove from heat, tossing until sesame oil is well blended.
- Transfer meat to serving plate; serve hot,warm or at room temperature.
- Arrange lettuce cups on serving platter; fill each with a spoonful of beef or provide lettuce cups and plate of beef and let guests assemble lettuce packets themselves.

- Heat oven to 375°F. Cut 2 (25x12-inch) pieces of foil. Slightly crush each sheet to make 3 1/2-inch ball; flatten balls slightly. Place on ungreased cookie sheet.

- Meanwhile, in 2-quart saucepan, melt butter over medium-high heat. Add onion and mushrooms. Cook and stir 5 to 7 minutes or until vegetables are tender. Stir in soup. Reduce heat to medium; cook about 4 minutes, stirring occasionally, until hot.
- In small bowl, stir cold water, cornstarch and pepper until smooth. Increase heat to medium-high; stir cornstarch mixture into soup mixture in pan, cooking and stirring until mixture boils. Cook, stirring constantly, about 1 minute or until mixture is slightly thickened.
