STEAK SALAD SANDWICH
The other night we had some beautiful New York Steaks for dinner but they were just two big to finish. So that meant leftovers that I needed to do something with. I decided to make a couple of Steak Salad Sandwiches and this is what I came up with. They were very tasty and satisfying. Enjoy

Steps:
- 1. Chop steak, veggies and pickles. Add slivered almonds to mix.
- 2. Place first 5 ingredients in bowl.
- 3. Add mayonnaise.
- 4. Blend all ingredients. Add spices of your choice, eg. Salt, pepper, garlic salt, Pappy's Seasoning.
- 5. Place mixture between two slices of Sour Dough French Bread or a bread of your choice.
- 6. Cut, serve and enjoy!
- 7. Hints/Suggestions: The amount of ingredients you use will totally depend on the amount of steak you have leftover. If you want a light meal, this would be delicious served on top of some fresh crisp lettuce greens! Also, if I had raisins then I would have put a small handful in for sweetness. This recipe can also be made using roast beef, pork, chicken or turkey. But, leave out the pickles in the chicken and/or turkey and add the raisins.

Steps:
- In a large bowl, stir together the green onions, lemon grass, cilantro, mint leaves, lime juice, fish sauce, chili sauce and sugar until well combined and the sugar is dissolved. Adjust the flavor, if desired, by adding more sugar and/or fish sauce. Set aside.
- Cook the steak over high heat on a preheated grill for approximately 4-6 minutes on each side, until it is cooked medium. Do not overcook the meat! Remove from heat and slice into thin strips. Add the meat and its juices to the sauce and refrigerate, tightly covered, for at least 3 hours.
- Tear the lettuce into bite size pieces and place in a salad bowl. Arrange the cucumber on top of the lettuce, and then pour the meat and sauce over. Top with the cherry tomatoes and garnish with fresh cilantro leaves.

WALDORF SALAD WITH ROAST BEEF SANDWICH

- Combine the mayonnaise and lemon juice in a medium-size bowl. Season with salt and pepper to taste. Toast the pecans in a toaster oven for 1 minute, or until brown to bring out their flavor. Be careful-they burn easily. Toss the celery, apple and pecans in the mayonnaise mixture. Place lettuce leaves on 4 plates and spoon the salad onto the leaves to serve.
- Spread the bread with mustard. Divide the roast beef between each slice of bread. Top with the tomato slices. Serve any extra tomato slices on the side.
- Divide yogurt between 4 dessert bowls.
PROVENCAL ROAST BEEF SALAD SANDWICH

- Split rolls in half and score them with a sharp knife to make craters for dressing to seep into.
- Make dressing with olive paste, Dijon mustard, lemon juice and olive oil. Season with olive oil.
- Spoon dressing into rolls, top with roast beef, sliced tomato and sprigs of parsley. Drizzle on more dressing and top with pimiento.
ROAST BEEF SANDWICH SPREAD
This is great way to beat the heat and use up leftovers! My family (both sides) have made this staple for generations. I can still see my Grandma using the crank meat grinder to make hers. Mom always made hers with the grinding attachment on her mixer and I've done the same (have also made it with the food processor). While we used to make this when we had left over roast beef, I have used lesser cuts of roasts to make this spread which is a great inexpensive way to extend the food budget. We like to serve this on fresh soft bread with lettuce and tomato slices. *Note* Deli Roast Beef is NOT recommended for this recipe.

Steps:
- Put beef and onion, celery, pickles and eggs through a meat grinder with the coarse plate, or mince the ingredients or process in a food processor until evenly chopped.
- Add remaining ingredients, with enough mayonnaise and pickle juice to taste and moisten as desired. Chill until ready to serve.
- Serve as a spread for crackers or melba rounds for sandwiches.
- You can toast the bread, if desired, and then spread with a little butter or mayonnaise. Add lettuce leaves; spread a layer of the beef spread over the lettuce, then top with sliced red onion.
- Makes enough for 6 to 8 sandwiches.
- Will keep in the refrigerator 5 days in tightly sealed bowl w/lid.

SANDWICH FILLING
This is a delicious filling that is put onto hamburger (or hot dog) rolls and baked in the oven. Fantastic for a cold weekend day when the kids need a good lunch. This recipe came from my mother. It has been one of my favorite recipes for over 30 years.

- Preheat oven to 400 degrees F (200 degrees C).
- Cook and stir ground beef in a large skillet until well browned, about 10 minutes; drain fat. Place cooked beef in a large bowl. Stir in tomato sauce, onion, black olives, pimentos, mushrooms, Cheddar cheese, chili powder, salt, and black pepper.
- Spoon sandwich filling on hamburger bun bottoms, spreading to the edges. Filling should be approximately 1/2" thick in the center of the sandwich.
