SOUVLAKI

Souvlaki is a Greek specialty made with tender cuts of meat. In this pork kebab recipe, the meat is marinated in a lemony olive oil mixture. Serve with rice pilaf and a Greek salad.

Steps:

  • In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.
  • Preheat grill for medium-high heat. Thread pork, peppers, and onions onto skewers.
  • Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.

Steps:

  • Combine spices and oil and press into meat on both sides.
  • Cut meat into 1 inch cubes and toss with lemon juice and let stand for 5 minutes.
  • Thread on skewers.
  • Broil or grill for about 5 minutes, turnning once.
  • Do not overcook.
  • Combine sauce ingredients and serve with Souvlaki.

1 lb sirloin tip steaks or 1 lb round steak

Steps:

  • 1. Marinade the beef in all of the other ingredients for at least 2 hours. 2. If making kebabs, skewer the beef. You can alternate the beef with chunks of vegetables like red bell peppers, mushrooms, onions, grape tomatoes, squash, zuccinni. 3. Grill the steaks or kebabs to desired doneness. Serve with white rice or pita bread, tsaziki sauce, and a greek salad.

1 - 1 1/2 lbs tri-tip steak, either whole or cut into kebab sized cubes.
2 tsp dried oregano
2 tsp minced garlic
1/2 tsp freshly ground black pepper
1 tbsp olive oil
1/4 cup lemon juice
1/8 cup red wine vinegar

Steps:

  • Put all ingredients into the zipper bag.
  • Add meat of choice.
  • Refrigerate for up to 24 hours, turning occasionally to coat meat evenly.
  • Reserve marinade to brush on meat while grilling.

4 lemons, quartered

1 cup white wine
1/4 cup olive oil
1 teaspoon salt
1 teaspoon oregano
1/2 teaspoon rosemary
pepper, to taste
2 bay leaves
2 garlic cloves, crushed

Steps:

  • Sandwiches 1. Heat broiler. In a large bowl, combine ground beef, Greek seasoning, garlic, lemon juice and salt and pepper. Divide into 16 pieces, shaping into balls, and thread onto 2 or 3 metal skewers. Coat broiler pan with nonstick cooking spray; place skewers on pan. Set aside. Sauce 2. Squeeze excess water from cucumber in paper towels. In a small bowl, stir cucumber, yogurt, mint, lemon juice, salt and pepper. Set aside. 3. Wrap pitas in foil and place in bottom of oven. Broil skewers for 4 minutes. Carefully flip over and broil an additional 3 minutes. Remove warmed pitas from oven. Top each with some sauce, shredded lettuce, 4 pieces meat and 2 tablespoons feta.

  • Prepare the marinade for the beef kabobs. In a large bowl add all the ingredients for the marinade and the meat and blend to coat. Cover the bowl with plastic wrap and let them marinade for at least 1 hour in the fridge. Preferably leave them to marinade overnight so they soak up even more all those wonderful flavours.
