BLACK RUSSIAN BROWNIES

These brownies pack a little punch and a ton of chocolaty goodness. :)

Black Russian Brownies image

Steps:

  • 1. Line bottom of 13x9" baking pan with waxed paper.
  • 2. Melt chocolate and butter with pepper in small saucepan over low heat. Remove from heat. Combine eggs, sugar and vanilla in large bowl; beat well. Stir in cooled chocolate mixture, Kahlua and vodka.
  • 3. Combine flour, salt and baking powder; add to chocolate mixture and stir until blended. Add pecans.
  • 4. Spread in prepared pan. Bake in 350 oven just until toothpick inserted in conter comes out clean, about 25 minutes.
  • 5. DO NOT OVERBAKE.
  • 6. Cool in pan on wire rack.
  • 7. Cut into bars.
  • 8. Sprinkle with powdered sugar, if desired. Makes about 30 brownies.

1 c unsalted butter
3/4 tsp black pepper
4 egg yolks, slightly beaten
1/2 c sugar
1/2 tsp vanilla extract
1/3 c kahlua
2 Tbsp vodka
1 1/3 c all purpose flour
1/2 tsp salt
1/4 tsp baking powder
1 c chopped pecans

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 by 9-inch square baking pan.
  • In a blender, puree the beans with the oil. Add the eggs, cocoa, sugar, coffee, and vanilla. Melt half the chocolate chips and add to the blender. Blend on medium-high until smooth. In a small bowl, whisk together the flour, baking powder, and salt. Add to the blender and pulse until just incorporated. Stir in the remaining chocolate chips. Pour into the prepared pan. Bake until the surface looks somewhat matte around the edges and still a bit shiny in the middle, about 20 minutes. Let cool at least 15 minutes before cutting and removing from the pan. Dust with confectioners' sugar and serve.

Although I enjoy sweets, other recipes have failed me (I'm a beginning baker). But not this one! It's easy, and the ingredients are always on hand. Even my boyfriend, who doesn't like most sweets, can't pass these brownies.

Steps:

  • In a microwave-safe bowl, melt butter; stir in cocoa until smooth. Cool slightly. In a large bowl, beat eggs and sugar. Stir in extracts and chocolate mixture. Combine the flour, baking powder and salt; gradually add to chocolate mixture. Stir in cherries and nuts. Pour into a greased 13x9-in. baking pan., Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean (do not overbake)., Meanwhile, for icing, in a large bowl, combine the butter, confectioners' sugar, cocoa, milk and vanilla until smooth; spread over hot brownies. Sprinkle with nuts. Cool on a wire rack. Cut into bars.
