BLAUKRAUT (BRAISED RED CABBAGE)

Blaukraut (Braised Red Cabbage) image

Steps:

  • Remove the 2 outer leaves of the cabbage. Cut the cabbage in half. Core it and cut into thin julienne. Put cabbage in bowl. Sprinkle with salt and red wine vinegar. Toss and let stand for 2 hours. Saute diced onions in butter. Add the apple and sugar. Saute lightly. Add strained cabbage to saute mix. Reserve the liquid. Stir for several minutes. Then add strained liquid, red wine, chicken stock, jam, cinnamon, cloves, bay leaf and cook for approximately 40 minutes in a covered heavy bottomed pan Remove cinnamon stick, cloves and bay leaf. Season with salt and pepper.

2 pounds red cabbage
1 1/2 tablespoons salt
1/2 cup red wine vinegar
1 onion, medium dice
1 tablespoon butter
1 medium apple, peeled and diced
3/4-ounce sugar
3/4 cup red wine
1/2 cup chicken stock
2 1/2-ounces lingonberry jam or cranberry sauce
1/2 cinnamon stick
1 to 2 cloves
1 bay leaf
Salt and freshly ground pepper

Red Cabbage, or Blue Kraut (Rotkohl, oder Blaukraut) image

Steps:

  • Remove any ragged leaves from cabbage.
  • Cut in quarters, wash and drain.
  • Shred cabbage on cutting board, discarding core.
  • Heat fat in Dutch oven or casserole.
  • If you use bacon, let it melt but not brown.
  • Add sugar to hot fat and saute slowly until golden brown.
  • Add apple and onion, cover and braise over very low heat 5 minutes.
  • Add shredded cabbage and toss until coated with fat.
  • Pour vinegar over kraut and stir to mix through.
  • Cover and braise slowly, 10 minutes until cabbage has turned"blue" or more exactly, bright purple.
  • Sprinkle with salt, add 1 cup water, cover and simmer slowly 1 1/2 to 2 hours or until tender.
  • Add more liquid if needed.
  • Season with pepper and salt, if needed.

2 -3 tablespoons butter or 2 -3 tablespoons minced bacon

Steps:

  • In a Dutch oven, cook bacon over medium heat for 5 minutes. Add onion; cook and stir until tender, 6-8 minutes. If desired, stir in liquid smoke., Add cabbage, water, vinegar, apple, sugar and salt. Bring to a boil; reduce heat. Simmer, covered, until cabbage is crisp tender, about 20 minutes, stirring every 10 minutes. Serve with a slotted spoon.

This recipe was given to me by my German sister-in-law. It goes really well with the Rouladen recipe I have also published. The vinegar ensures that the lovely red colour of the cabbage remains as it cooks. Enjoy.

Blaukraut (Red Cabbage) image

Steps:

  • Cut cabbage very finely. Heat oil in pan, add onion and cabbage and cook gently. Before cabbage collapses add vinegar to keep the red colour.
  • Add a cup of water (or you can add some wine too), sugar, cloves, bay leaf. Put lid on pot and cook at low heat until cabbage is soft (about 1 hour and 30 minutes). Keep checking as it cooks to make sure you have enough liquid all the time. Season with salt.
  • Half and hour before ready, add finely cut apple.
  • When liquid is nearly cooked out, add flour.
  • Give it a good whisk and heat up for short time.

1/2 red cabbage
1 onion, finely sliced
2 tablespoons oil
1 tablespoon cider vinegar
1 cup water
2 cloves
1 small bay leaf
1 teaspoon sugar
1 apple, finely sliced, granny smith is good
1 teaspoon flour
salt, to taste
1 tablespoon red wine (Merlot works well)

ROTKRAUT - RED CABBAGE

Another recipe from Grandma Busch's recipe file. She served this with Sauerbraten. It is probably my favorite way to eat cabbage. Any leftover cabbage was served cold like a side salad.

Rotkraut - Red Cabbage image

Steps:

  • 1. Wash the red cabbage, remove trunk and cut into fine strips.
  • 2. Brown the sugar in the butter until light brown in color. Add the finely chopped onion and apples, peeled and cut into small cubes.
  • 3. Sauté for a few minutes. Add the red cabbage and mix everything to combine. Immediately pour a little of the red wine vinegar on the cabbage so it retains the red color.
  • 4. Season with salt, add a little of red wine, bay leaves, cloves and steam covered on medium heat until cabbage is tender for about 45 - 60 minutes.
  • 5. At the end dust cabbage with some flour, season to taste and add some more red wine and/or vinegar if necessary.

2 lb red cabbage, shredded
2 Tbsp unsalted butter or olive oil
1 Tbsp sugar
2-3 tart apples
4 Tbsp red wine vinegar
kosher salt to taste
1 c red wine
3-4 whole cloves
2-3 bay leaves
1 Tbsp all purpose flour

  • Tie the bay leaves, cloves, and peppercorns together in a cheesecloth. (Optional, but this makes for much easier removal later).
  • Cover and simmer over low heat for 1.5 - 2 hours, checking occasionally to be sure there is enough moisture and the cabbage isn't sticking.
