FROZEN CHERRY MOJITOS
In the endless search for new concoctions for summer libations, I found this on "my cooking addiction" website. A different spin on the popular Mojito. Makes enough for 6 drinks!

- 1. Place the frozen cherries, ice, mint, rum, and lime simple syrup in a blender. Blend until smooth.
- 2. Pour the mixture into chilled glasses and top with crushed ice. Garnish with lime wedges and cherries.
- 3. Lime Simple Syrup Directions In a small saucepan, combine the sugar, water, lime juice, and lime zest over medium heat. Bring to a boil, reduce heat, and simmer for about 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool to room temperature minutes before using. If making in advance, store in a sealed container within the refrigerator. Notes: You can substitue vodka for the rum if preferred.
SWEET VIRGIN BLENDED CHERRY MOJITO
What a great way to have something to sip on at gatherings, holidays or in the hot summer months. This one will give the taste of a Mojito without the hangover the next day.

- 1. For Simple Syrup: In a small saucepan, combine sugar, water and lime zest over medium heat and bring to boil. Reduce heat and simmer for about 5 minutes stirring occasionally until sugar is dissolved. Remove from heat and let the syrup cool. About 15 minutes. Strain through fine wire strainer before mixing into drink.
- 2. For drink: Place cherries, crushed ice, mint, lime juice and simple syrup into blender and blend till smooth. Add Citrus flavored drink and combine with spoon (do not turn on blender for this part). Pour mixture into chilled glasses and top with ice, lime wedges and cherries.
BLENDED CHERRY MOJITOS

- In a small saucepan, over medium heat, combine the sugar, water, and lime zest. Bring to a boil, then reduce the heat and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using.
BING CHERRY MOJITOS
Like other mojitos, this contains sparkling water for effervescence and lime juice but also includes plump cherries and cherry vodka.

- Bring sugar and 1 1/4 cups water to a boil in a small saucepan, stirring until sugar has dissolved. Remove from heat; let cool completely. (Makes about 2 cups syrup.) Syrup can be refrigerated in an airtight container up to 1 month.
- Put lime juice into a medium nonreactive bowl. Halve and pit cherries; add to lime juice. Stir in syrup. Refrigerate at least 1 hour (up to overnight).
- Stir cherry mixture and vodka in a large serving bowl. Fill 12 glasses with ice. Spoon 1/2 cup cherry-vodka mixture into each glass. Top off with sparkling water. Serve immediately.

- Place enough sugar on small plate to reach depth of 1/4 inch. Run lime wedge around rim of 4 Martini glasses to moisten. Dip rims into sugar on plate. Blend rum, lime juice, and 1/3 cup sugar in blender until sugar dissolves. Add 4 cups ice; blend until slushy and almost smooth, adding up to 1 cup more ice, if desired. Add 12 mint leaves and blend until small green flecks appear. Pour into prepared glasses. Garnish with mint sprigs.

- (Do this a couple of hours ahead of time- or longer- so that it has time to chill). > Boil water, add sugar and stir until dissolved. Let cool, then chill in the refrigerator until it has a chance to get very cold.
- Place 4 to 5 mint leaves in the bottom of 4 to 6 tall glasses. Squeeze half a lime into each glass. Add 2 ounces of rum to each glass. Use a muddler (or the handle of a wooden spoon) to smash the mint leaves, lime juice and rum together. Divide the sweetened cherry juice between the four glasses. Top each drink off with chilled club soda. Stir, garnish with fresh cherries and serve. Add an ice cube or two, if desired.
