SALMON BLT SANDWICH
This salmon BLT is a quick and dressed-up dinner that it just amazing.

Steps:
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler to 475 degrees F (245 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and extra crispy, 10 to 12 minutes. Drain bacon slices on paper towels.
- While the bacon is cooking, place bread on a baking sheet and use a pastry brush to lightly coat the tops with olive oil.
- Toast bread, without turning, under the preheated broiler until crispy (like a crouton), about 4 minutes, watching carefully as it toasts. Remove from the oven and set aside.
- Add remaining oil to a large skillet with butter. Season salmon with salt and place skin-side down in the hot pan. Cook until skin is crispy and salmon is nearly cooked through, about 6 minutes. Flip and cook until top side of fish is just browned, 2 to 3 minutes more. Remove from the pan, discard skins, and sprinkle with seasoned salt.
- Spread 1 tablespoon mayonnaise on the untoasted side of a bread slice. Top with 1 salmon fillet, 1 tablespoon pesto, 2 lettuce leaves, 2 tomato slices, 2 slices bacon, 1 slice Havarti cheese, and a slice of bread, toasted-side out. Repeat to assemble remaining sandwich.

This is a little twist on the tradtional BLT Sandwich. I tried it for the first time tonight, and find it tastes wonderful. Adjust the amount of each ingredient to fit your taste.

Steps:
- Cook the bacon in the frying pan.
- Meanwhile, slice up the tomatoes, separate the lettuce, and gather your remaining ingredients.
- Once the bacon is cooked, place it on a few paper towels to absorb the grease.
- Toast your bread and place on plates.
- Put mayo on one half of the sandwich, and mustard on the other half
- Layer your sandwich in any order you prefer with the remaining ingredients- break the bacon in half to make it fit if necessary.

- Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- Arrange the cooked bacon, lettuce, and tomato slices on one slice of bread. Spread one side of remaining bread slice with the mayonnaise. Bring the two pieces together to make a sandwich.

THE GOURMET BLT SANDWICH
I adapted this tasty meal from a recipe I saw in my local newspaper. The peppery rocket and salty bacon go wonderfully together, and it looks quite pretty on a plate.

Steps:
- Fry bacon until cooked, and then cut into smaller, bite sized, pieces.
- Meanwhile, bring a small pot of water to the boil.
- When water is ready, throw in tomatoes for 15 seconds.
- Scoop them out of pot and put into waiting bowl of cold water.
- Peel skins off and dice.
- Put peas and beans into pot of boiling water and cook for 1 minute.
- You want them to remain crunchy.
- Mash the avocado in a bowl.
- Add basil and lemon.
- Butter the bread and spread avocado thickly on slice.
- Then top with a bit of rocket, a few diced tomatoes, bacon, peas, beans and finally the cheese.
- Grill for 2-4 minutes until cheese is bubbling and bread is crusty.
