Steps:
- Preheat oven to 450 or Deep Fryer to 350 (Depending on how you want to cook your fries)
- Peel potatoes, wash, and then chop them in to long medium-thick strips.
- Place peeled and cut fries on paper towel or small towel to dry and sprinkle with salt.
- Fry bacon
- If cooking fries in the oven place on cookie sheet lined w/ foil and place in oven when preheated. If deep frying drop them in the fryer for 10 - 15 minutes depending on how crispy you like them. If cooking in the oven cook 10-15 minutes and flip then cook another 10-15 on other side.
- Slice tomato/lettuce.

- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. In a small shallow bowl, combine the flour, cornmeal, seafood seasoning, pepper and salt. Place buttermilk and flour mixture in shallow bowl. Dip tomatoes in buttermilk, then coat with flour mixture., In an electric skillet or deep fryer, heat oil to 375°. Fry tomatoes, a few slices at a time, for 1 minute on each side or until golden brown. Drain on paper towels., Serve tomatoes on Texas toast with mayonnaise, bacon and lettuce.

- Bake 31 to 35 min. or until crisp and golden brown.
- Sprinkle with cheese; bake 3 to 4 min. or until melted.
- Top with lettuce, tomatoes, bacon and mayo.

Steps:
- Preheat oven to 400 and lightly butter a 9x13 baking dish. Spread half the cooked hash brown potatoes in the dish. Layer the spinach, onion, bacon and one cup of Monterey Jack cheese. Top with remaining potatoes, cheese and the sliced tomatoes.
- Bake at 400 degrees for 15 to 20 minutes until slightly bubbly and cheese is melted. Mix the sour cream and horseradish in a bowl and set aside to serve on the potatoes.
