BOURBON-GLAZED HAM
This is a delicious combo of about five recipes I found while researching for my first Thanksgiving ham. The empty baking pan afterwards was my best compliment!

Steps:
- Score the surface of the ham, making diamond shapes about 1/2-inch deep. Place the ham in a large, resealable bag. Add the bourbon, brown sugar, crushed pineapple, honey, and garlic to the bag; refrigerate at least 8 hours, turning the bag over several times while marinating.
- Preheat oven to 350 degrees F (175 degrees C).
- Transfer the ham and marinade to a large baking dish; pour the water into the dish. Attach the pineapple rings around the surface of the ham with toothpicks.
- Bake in preheated oven until the internal temperature reaches 165 degrees F (95 degrees C), basting occasionally with the sauce in the pan, 90 to 105 minutes.

BOURBON AND PRALINE HAM
It's impossible to describe the flavor of this ham. I use dark brown sugar when I do this and real maple syrup. This is my Easter ham, Christmas ham and, if I do a ham for Thanksgiving, it's my Thanksgiving ham. The marinating time is included in the preparation time. The ham itself is really simple and easy to prepare.

Steps:
- Score ham.
- Place ham in a large sealable plastic bag and pour bourbon over ham.
- Marinate for 2 to 3 hours (I have left it marinating overnight with excellent results).
- Pour off bourbon, reserving for later, and bake ham at 325 degrees for 2 hours.
- Melt butter.
- Stir in reserved bourbon marinade, maple syrup, brown sugar and chopped pecans.
- Bring to a boil.
- Pour glaze over ham and brush with a pastry brush.
- Decorate with pecan halves and bake for an additional 15 to 20 minutes.

BOURBON AND PRALINE HAM
I made this for the first time on Easter and it was wonderful. THe ham was moist and juicy. I don't think I will make ham any other way. I left out the pecans because my family is not crazy about nuts. The recipe comes from Under the Magnolias -- A Tasteful Tour of Athens -- a junior league cookbook in my collection.

- Score the skin and fat of the ham and rub surface liberally with bourbon. Place in the smallest baking pan that will hold it and pour remaining bourbon over the top. Marinate 2-3 hours, basting every 30 minutes. Pour off excess bourbon and reserve. Bake ham, skin-side up, in 325º oven as directed on label.
- Melt butter in saucepan. Stir in reserved bourbon, maple syrup, brown sugar and ground pecans. Bring to a boil and boil for 5 minutes, stirring occasionally. Brush glaze over ham several times during baking. Decorate with pecan halves and bake 15 to 20 minutes longer.
CHRISTMAS HONEY PRALINE HAM
The perfect ham for Christmas. This delicious ham is injected with honey praline sauce then baked and topped with pineapple slices and cherries. This ham will receive applause for its beautiful presentation as well as the irresistible flavor.

- Preheat oven to 325°F Wash the ham under cold water then pat dry with paper towel. With a sharp knife, score the surface with shallow diagonal cuts, making diamond shapes in a checkerboard pattern at one-inch intervals. Insert the cloves into diamonds.
- In a saucepan over medium heat, combine the praline sauce, honey, salt and pepper and heat until the syrup is thin and runny. Place the ham into a roasting pan fatty side up. Inject warm praline sauce deep into the ham, injecting in various spots, up to 2 ounces per pound. Cover with foil and bake for 1 hour and 30 minute.
- In a bowl, combine the dry rub and pineapple juice. Remove foil from ham, pour pineapple mixture over ham, arrange the pineapple slices and cherries on ham and secure with tooth picks. Place back in oven, uncovered for 30 to 45 min or until a meat thermometer reads 140°F; periodically ladling drippings back over ham every 7 minute.
- Remove ham from oven and let rest covered for 15 min, basting periodically to keep outside moist before slicing.

BOURBON PECAN PRALINES

- Grease 2 baking sheets; set aside. In a large heavy saucepan over medium heat, melt butter. Stir in sugars, then the cream; cook and stir until mixture comes to a boil. Cook, stirring occasionally, until a candy thermometer reads 236° (soft-ball stage), about 20 minutes. , Remove from the heat; stir in the pecan halves, chopped pecans and bourbon. Immediately drop by tablespoonfuls onto prepared baking sheets. Let stand until pralines are set and no longer glossy. Store in an airtight container.

- Line 2 baking pans with parchment paper; set aside. In a 4-quart saucepan, combine buttermilk, baking soda, and sugar. Over medium-high heat, bring to a rolling boil, stirring constantly. To prevent crystals from forming, brush sides of pan with cold water.
- Cook, stirring constantly, until a candy thermometer registers 240 degrees (soft-ball stage), about 15 minutes. Remove from heat. Add butter and bourbon; stir with a wooden spoon until butter has melted. Stir in pecans; beat with wooden spoon for 30 seconds. Immediately spoon 1 tablespoon of pecan mixture onto prepared baking pan, forming a 2-inch patty. Repeat with remaining mixture. If mixture begins to harden, return to heat for 1 minute, scraping down sides and stirring. Let patties stand until set, about 1 hour. Refrigerate in an airtight container for up to 2 weeks.
ROSEMARY-BOURBON GLAZED HAM

- Remove ham from packaging and bring to room temperature for up to 2 hours before baking.
- Preheat oven to 325ºF. Arrange a rack in the lower third of the oven and remove upper racks.
- In a small pot over medium heat, whisk together brown sugar, bourbon, apple cider vinegar, Dijon mustard, orange zest and juice, rosemary, garlic powder, onion powder, cinnamon, and a few turns of the pepper mill. Bring to a low simmer and cook for 5-6 minutes, stirring frequently, until the sugar has dissolved. Remove from heat and set aside.
- Place ham in a large roasting pan, face down. Brush half the glaze over the surface of the ham. Loosely cover ham with foil and bake for 1 hour and 30 minutes. During cooking, brush with remaining glaze mixture every 30 minutes. For the last 15 minutes of cooking, remove foil. Let stand up to 30 minutes before transferring to a serving platter.

- Remove Cooked Ham (10 pound) from cryovac packaging and place on wire rack inside full size steam pan with Apple Juice (8 fluid ounce) in bottom of pan.
