APPLESAUCE SPICE CUPCAKES

I began making these moist cupcakes in grade school and still bake them today. -Edna Hoffman, Hebron, Indiana

Applesauce Spice Cupcakes image

Steps:

  • In a large bowl, cream butter and sugar. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine dry ingredients; add to creamed mixture alternately with applesauce., Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing to a wire rack. Frost cooled cupcakes.

1-1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
3/4 cup applesauce
1 cup prepared cream cheese frosting

Bran Applesauce Cupcakes image

Steps:

  • 1. In medium mixing bowl, combine applesauce, milk and KELLOGG'S ALL-BRAN cereal. Set aside. 2. In large bowl, beat together margarine, sugar, cinnamon, all-spice and cloves. Beat in eggs, one at a time, beating well after each addition. 3. Stir together flour, baking powder, soda and salt. Add alternately with cereal mixture to margarine mixture, beating well after each addition. Spoon into 2 1/2-inch muffin-pan cups coated with cooking spary or lined with paper cups. Fill half full. 4. Bake at 350°F oven 20 minutes or until wooded pick inserted in cupcake comes out clean. Cool 10 minutes, remove from pan and cool completely. Frost with Lemon Frosting. LEMON FROSTINGCombine frosting ingredients, mixing until smooth. Frost cooled cupcakes. If desired, garnish with nut pieces.

These are great little bran muffins with alot of flavor. Original recipe is from the back of a Hodgson Mill oat bran box, but I've made a few modifications and think these are delicious.

Oat Bran Applesauce Muffins image

Steps:

  • Preheat oven to 400. Line 12 muffin cups with paper liners or grease muffin cups. Blend together dry ingredients. In a separate bowl, combine eggs, applesauce and yogurt. Mix into dry ingredients until well blended. Spoon into muffin cups. Let stand 10 minutes. Bake 15 minutes or until golden brown. Makes 12 nice sized muffins.
