BROCCOLI AND WASABI DIP

The broccoli gives a bright green dip that doesn't discolour and the wasabi adds a touch of heat. Make this an hour or 2 in advance so that the flavours have time to blend. Serve with crackers or chips. From Jennifer McLagen of Food and Drink.

Broccoli and Wasabi Dip image

Steps:

  • Cut the broccoli into florets and cook in boiling salted water until tender. Refresh under cold running water and drain well.
  • Peel and finely dice the onion.
  • Melt the butter in a small frying pan, add the diced onion and cook over a low heat until soft but not coloured.
  • Place the drained broccoli, cooked onion and cheese in a food processor. Blend until smooth.
  • Add the salt, wasabi powder and lemon juice. Blend until well mixed, then check the seasoning.
  • Cover and refrigerate until ready to serve.

Wasabi-Ae (Broccoli With Wasabi Sauce ) image

Steps:

  • Bring the water and salt to a boil. Cook the broccoli until it's crisp-tender and still a bright green in color. Drain, and refresh very briefly with cold running water. (Note: you can skip this step if you're not in a hurry and have time to cool the broccoli.).
  • In the meantime, mix together all the remaining ingredients except the wasabi in a small pan, and stir over a low heat until the sugar is melted. Let cool, and add the wasabi, reserving 1/2 tsp or so. Mix well until the wasabi is dissolved.
  • Pour the sauce over the broccoli and mix well. Serve at room temperature or chilled, optionally with a little additional wasabi on the side for people to mix into the broccoli as they eat it (if they really like wasabi).

Creamy Broccoli Dip image

Steps:

  • Bring a medium saucepan of salted water to boil. Add the broccoli and cook until tender, about 4 minutes. Drain and rinse under cold water until cool. Pat dry. Alternatively, you can drain the broccoli and immediately add to the food processor (just chill the dip before serving).
  • Transfer the broccoli to a food processor and add the mayonnaise, milk, parsley, chives, lime juice, dill, 1/2 teaspoon salt and several grinds of pepper. Pulse to make a smooth dip. Transfer to a serving bowl. Garnish with chopped dill. Leftover broccoli dip will keep covered in the refrigerator for up to 2 days. (Makes about 1 1/2 cups of dip.)
  • Serve with broccoli florets and ridged potato chips.

  • Saute onion in butter.
  • Add mushrooms and saute until soft.

White Beans and Charred Broccoli with Parmesan image

Steps:

  • Drain beans and place in a large heavy pot. Remove rind from Parmesan and add rind along with onion and garlic to beans. Pour in water to cover by 2"; season with salt. Bring to a boil, reduce heat, and simmer, adding water as needed to keep beans submerged, until beans are tender, about 2 hours. Let cool. Discard vegetables and Parmesan rind, then drain.
  • Preheat oven to 450°F. Toss broccoli with 1/4 cup oil on a rimmed baking sheet; season with salt and pepper. Roast, tossing occasionally, until tender and lightly charred, 15 to 20 minutes. Let cool.
  • Finely chop half of broccoli and toss in a large bowl with anchovies, lemon zest, lemon juice, and beans. Shave half of Parmesan over and add remaining broccoli and 1/4 cup oil; toss and season with salt, pepper, and more lemon juice, if desired. Shave remaining Parmesan over.
