Steps:

  • Cook 1 bunch broccoli spears in a steamer set over simmering water, 10 minutes. Pulse a 1-inch piece peeled ginger, 1 garlic clove, 2 tablespoons each water and sesame oil, 1 tablespoon rice vinegar, and a pinch each of sugar and salt in a mini food processor. Drizzle over the broccoli and sprinkle with toasted sesame seeds.

SESAME BROCCOLI

Mild broccoli gets energized by this textured, rich dressing spiked with sweet miso and soy sauce. Crushed toasted sesame seeds create the intense flavor base for this rich, super nutty sauce. The dish is a great side to accompany any grilled or roasted protein; it can be made a few hours in advance and is equally tasty chilled or at room temperature. Any leftovers can be chopped and tossed with warm pasta and grated Parmesan the next day.

Steps:

  • Bring a large pot of salted water to a boil and prepare an ice bath.
  • While the water comes to a boil, in a small nonstick skillet over low heat, refresh the toasted sesame seeds, stirring frequently, until oils are released and seeds are warmed through, about 3 minutes. Transfer to a mortar and pestle and grind until half the seeds are coarsely crushed. Alternatively, pulse once or twice in a food processor until half of the seeds are crushed.
  • Transfer sesame seeds to a large bowl and add the oil, miso, soy sauce and vinegar; mix or whisk well.
  • Once the water is boiling, blanch the broccoli by cooking it until bright green, about 1 minute, then drain and transfer to the ice water to cool. Drain well and pat dry.
  • Add the cooked broccoli to the dressing, season with salt and pepper and toss to evenly coat. Serve at room temperature or refrigerate and serve chilled.

Steps:

  • Steam the broccoli or simply boil it for 3 mins. Make a rough paste by pounding or blending the garlic, ginger and coriander stems together.
  • Pour the oil into a hot wok or frying pan. Add the paste, then turn up the heat to full and sizzle for 1 min. Tip in the cooked broccoli, toss well and sprinkle over the sesame seeds. Turn off the heat, throw in the coriander and basil leaves, give it a stir and serve.

  • In a large bowl, stir together the vinegar and salt. Add broccoli and toss to combine.
  • In a large skillet, heat olive oil until hot, but not smoking. Add garlic and cumin and cook until fragrant, about 1 minute. Stir in sesame oil and pepper flakes. Pour mixture over broccoli and toss well. Let sit for at least 1 hour at room temperature, and up to 48 (chill it if you want to keep it for more than 2 hours). Steps:

  • If using sesame seeds, place them in a small, dry skillet and toast, shaking the pan frequently, until lightly browned. Set aside to cool. Rinse the broccoli and separate the florets from the stalks, reserving the stalks for another use.
  • Arrange the florets in a vegetable steamer basket or steamer insert. Bring about 1 inch of water to boil in a deep, wide pot. Lower the steamer into the pot, making sure it rests above the water. Cover and cook the broccoli until tender, 4 to 5 minutes. Transfer the cooked broccoli to a serving bowl and drizzle with the sesame oil. Add sea salt to taste, and sesame seeds and stir to combine. Serve immediately.

Sautéed Broccoli With Toasted Garlic, Orange and Sesame image

Steps:

  • Rinse broccoli. Cut off thick stem where it meets slender stalks, and reserve. With sharp paring knife separate stalks into florets, leaving stems about 1 1/2 inches long on each. Cut pieces in two lengthwise and lay flat-side down. Cut each piece lengthwise in two and repeat until you have 3-inch-long carved floret and stem pieces of approximately equal thickness (about 1/2-inch) top to bottom. Peel tough skin from stems, and cut crosswise into 1/4-inch medallions. There should be 12 ounces of broccoli, about 7 cups. Set aside.
  • Toast sesame seeds in large nonstick skillet over low heat until golden, about 5 minutes. Transfer to small bowl, and set aside.
  • Place olive oil and garlic in skillet over low heat. Toast garlic, stirring frequently, until garlic is deep golden brown, about 6 minutes. Add pepper flakes to hot oil, and stir. Transfer to small bowl, and set aside. Toss broccoli, salt and 1/4 cup water in same skillet, cover and set over high heat. Cook until broccoli is tender, shaking pan and stirring once, 4 minutes. Uncover skillet (water should be gone), and toss. Stir in garlic and oil, oyster sauce and orange peel. Transfer to warm serving platter, and sprinkle with sesame seeds.

The dish is a nice and easy change from the norm, and quite different from some of the other broccoli recipes I have seen here. Try it, you might like it as much as we do! Due to a great suggestion from a reviewer, I have added toasting the sesame seeds, a marvelous idea! Also, PLEASE don't substitute the sesame oil as one review did here, you loose the entire flavor of this great dish! This is an adopted recipe and the above comments were made before I inherited it. Now having made this dish, I can concurr: it's a sesame oil that turns your head and gets your taste buds going in this recipe, and toasting the seeds also adds fuller flavour. I'm delighted to have adopted this recipe and will be making it often:) I hope that you will enjoy it too!
