BROILED ZUCCHINI AND POTATOES WITH PARMESAN CRUST

Steps:
- Bring a medium pot of water to a boil over high heat. Add the potatoes and cook until just tender, about 8 to 10 minutes. Drain the potatoes and let cool. When cool, cut the potatoes in half.
- Place a medium saute pan over medium heat. Add the butter, garlic, thyme and rosemary and let cook until the butter melts, about 2 minutes. Meanwhile, season the cut sides of the zucchini and potatoes with salt and pepper. Carefully place the zucchini and potatoes cut side down in the melted butter. Let them cook until golden brown, about 12 to 15 minutes.
- Preheat the broiler. Line a baking sheet with foil. Place the browed zucchini and potatoes on the baking sheet cut side up. Sprinkle the tops with the Parmesan. Place in the broiler until the cheese is golden brown, about 4 minutes. Transfer to a plate and serve.
PARMESAN ROASTED ZUCCHINI
Steps:
- Preheat the oven to 425 degrees F.
- Trim the stem end of the zucchini, cut them in half lengthwise, and scoop out a small channel of seeds with a regular teaspoon. Place the zucchini in one layer on a sheet pan, brush generously all over with olive oil, and turn the zucchini cut side down. Sprinkle with 1 teaspoon salt and roast for 12 to 15 minutes, until just tender but still firm when tested with the tip of a small paring knife.
- Meanwhile, make the bread crumbs. In a medium bowl, combine the garlic, parsley, basil, Parmesan, 1 teaspoon salt, and 1/2 teaspoon pepper. Add the panko and 3 1/2 tablespoons of oil and mix well.
- Turn the zucchini cut side up and spoon a heaping tablespoon of the panko mixture evenly on each zucchini. Bake for another 8 to 10 minutes, until the panko is crispy. Serve hot, warm, or at room temperature.
BROILED ZUCCHINI
This is a very simple yet tasty side dish. It is a Semi-cooked hot vegetable that gives a totally different taste and texture to cooked zucchini. I created this dish years ago because I did not care for the taste and texture of soft cooked zucchini. This has been a family favorite ever since. I am giving the ingredients for one serving and you can simply multiply it for the number you wish to make.

Steps:
- Wash off zucchini, cut off ends and split lengthwise.
- Lay the split pieces of zucchini cut side up in a lightly greased baking dish.
- Pour over the butter or oil.
- Sprinkle the cheese evenly over the cut edge.
- Sprinkle with spices.
- Broil just until the zucchini slices get a lovely light brown on the top.
- Remove from the broiler, it will be cooked ala-dente' with about half of the crunch still in it.
- It is easiest to eat with a sharp knife handy to cut into small chunks for each bite -- but make sure you get some of the spices and cheese with each bite -- hm-m-m-m.
BROILED ZUCCHINI

- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Slice zucchini into 3 lengthwise pieces. Spray each slice with cooking spray.
- Season with salt, garlic powder, and onion powder and set on a baking sheet.
- Broil in the preheated oven until lightly browned, about 5 minutes. Turn zucchini and broil on the other side until lightly browned, an additional 5 minutes.

- Clean ends off zucchini and rinse well.
- Place oil and baby zucchini in pan over medium-low heat. Cover and let cook for 7 minutes, stirring occasionally.
- Take off heat and sprinkle with parmesan cheese and chives. Toss to coat.
- Use salt and pepper to taste and enjoy.

- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Cut the zucchini in half crosswise, then slice each half into 3 slices lengthwise, making 6 slices per zucchini.
- Mix the butter, garlic, and parsley in a bowl, and spread the mixture on both sides of each zucchini slice. Sprinkle one side of each slice with Parmesan cheese, and place the slices, cheese sides up, crosswise on the preheated grill to keep them from falling through.

- Preheat the oven to 475°F.
- Wash and dry the zucchini, trimming the blossom and stem ends slightly if necessary. Quarter each zucchini lengthwise; if they are less than 3/4 inch in diameter, cut them in half instead. In a medium bowl, toss the zucchini with the oil and season with salt and pepper. Lay them out on a baking sheet, end to end, cut sides up, in a tight row. Roast for about 8 minutes or until they are just starting to color but are still al dente, or half tender. Remove from the oven.
- Preheat the broiler for several minutes until it is very hot. Sprinkle the zucchini with the cheese and broil until the cheese is golden brown and the zucchini are tender, 3 to 4 minutes.
